Vik I Myrdal..its a place in Iceland with a black beach .That beach is the inspiration of this dish.The flavours are also preety icelandic as it has ryebread ice cream with apple caramel and brioche crunch, fermented cucumber seeds and celery,and the water is whey so all of it tastes together like sea.
