  • 🍝 Simple Mushroom Spelt Spaghetti 📷 by @delicious_and_healthy_by_maya 🚨🚨Recipe: For 1 person 1 cup button mushrooms 1/2 cup chopped baby tomatoes 1/2 tsp smoked paprika 1/3 tsp chili Salt to taste 2 tsp soy sauce 1 tsp toasted sesame oil Bunch of parsley - minced If you want you can add 1 garlic clove 1 portion spelt spaghetti Extra Virgin Olive Oil 1 tsp ume su (optional) Method: 1. Cook the spaghetti 2. On olive oil warm the spices and then add mushrooms(and minced garlic if using), season with salt 3. Sauté until slightly browned and fragrant, then add tomatoes snd shoyu. Keep sautéing for 2-3 minutes until veggies are soft. 4. Add toasted sesame oil (for the added smokiness) and parsley. Mix in spaghetti. At this point I like adding a little bit more of olive oil for the taste.   • Honestly I was gonna post a photo of me flexing & smiling at the gym but I feel like this is a more accurate representation of me right now lolol. ~F*cking exhausted~, skin isn’t perfect, l o a d s of homework to get done, etc... but I’m happy 🌻 - Just remember when you scroll through SM that most of us are showing a whooole lot of highlights. We pick and choose what we want the world to see. Don’t forget that it’s normal to have an “eh” day, just like it’s normal to have an amazing day. - & that’s my 2 cents for this fine Monday 💃🏼 #backtostudying #ineedaboutaweekofsleep #sos #thesedarkcirclesaredisrespectful

  • I’m spending this holiday weekend in Portland where this afternoon I got to hang out at my kid’s house and listen to his music and meet his new roommates and take his picture and watch him play his games online and just be in his presence for a little while. Not trying to be dramatic but it’s so profound to witness his life! Just the fact that he’s 21 now and a senior in college and is using wifi that he made all the calls and appointments to set up! Lol. 👊🏽 But also (much more importantly) because he’s just an excellent human being who is so smart and funny and talks openly about valuing kindness and love and connection. And maybe this is a good time to say there were so many moments along the way where I was scared it wasn’t gonna work out or that some big tragedy would happen or even some regular-sized tragedy like I would unconsciously raise him from my fear or my pain instead of my faith and my growth. Well, guys, it is turning out fine! I didn’t do it perfectly and neither did he, but here I am and here he is and we’re both doing great! If I had to name just one thing I did right it’s that I TRUSTED. It’s a daily practice/discipline to place my awareness on what is highest in me and what is highest in him and what is highest in life — and to name *that* the truth. I realize this is starting to sound like a special occasion post, and it’s only like, President’s Day, but whatever I’m feeling super grateful so President’s Day will have to do. Thank you my son, for this spiritual path and for being an awesome teacher and a total inspiration. I love you! ♥️
