The rice absorbs the water it’s cooked in and grows long... The rice is cooked in the stock of Guanciale and black pepper and fat from the same reduction .. @yojitokuyoshi cooked the sauce and we topped with crispies of Guanciale

Best dining experience I have ever had last night. GAGGAN was featured on Chef's Table and will close in 2020. Food was great, but it was the experience that really got me and made it memorable. We were sitting in the new wing of the house where the chef's prepare the dishes in front of us. Plus the menu was an emoji menu.
Getting a booking requires you to book 2-3 months in advance 😱 so for anyone contemplating going...GO!!!! #Gaggan#gagganbangkok

As the Sous-chef de cuisine of Gaggan restaurant - the 2 starred Michelin restaurant in Bangkok, as well as the No. 1 restaurant of Asia's 50 best restaurant 2018, chef Mario Malvaez has also been the man Friday of Chef Gaggan Anand, they ended up becoming partners at the latest project -- restaurant "Meatlicious", which features nothing but grilling, frying and baking everything by wood fire, and now here they are, in Taipei for pop up event for 4 days until 2/24.

I love all these effects that came with ridiculous smoke, serious wood fire, the sound of meat charring & sizzling on the grill, and of course the flavour so intense pumping in your mouth back and forth that everything in the kitchen seems calling for your attention big and loud that you can hardly resist. .

After a decade, Gaggan will be closing this restaurant in 2020 and moving to Fukuoka, Japan to open a new restaurant with Chef Takeshi Fukuyama. My favorite dish of the night was Gaggan's mother recipe of seabass with mustard sauce wrapped in banana leaf and smoked in cedarwood. It was simply divine.
Gaggan is the #5 Best Restaurant in the World 2019 and the #1 Asia's Best Restaurant. The menu consisted of 25 courses based on a particularly emoji with a corresponding music playing in the background. The menu was served playfully but yet held in the essence of Indian cuisine. It was simply one of the best.
