  • No Bake (yes, please!) Coconut Pecan Cookies ⁣

They’re easy to make, but will leave a big impact (and not just on your waistline). Comment below ⬇️ if you’ve ever made cookies similar to these. ⁣

Ingredients: ⁣
2 c. sugar ⁣
1 c. milk ⁣
1/2 c. butter ⁣
20 large marshmallows ⁣
1 c. shredded coconut ⁣
1 c. toasted pecans - chopped ⁣
2 c. vanilla wafer crumbs ⁣
⁣
Chocolate drizzle: ⁣
1 c. chocolate chips ⁣
4 tsp. shortening⁣
⁣
Directions: ⁣

First up, toast your pecans. If you’re going to skip a step, people, this isn’t it. Simply place them on a parchment-lined baking sheet in a 300 degree oven for 8-10 minutes. Keep an eye 👁 on them. You’ll know they’re done when they are a touch darker and have a nutty aroma. Nutty aroma? What is that? I’m not sure either, but you’ll know it when you smell it 🙃 ⁣

Next, in a large saucepan, combine sugar, milk and butter. Cook over medium-high heat until mixture comes to a boil, stirring continuously. Once boiling, continue to cook for 4-5 minutes longer or until mixture reaches a soft ball stage (235-240 degrees F. with a candy thermometer). It’s important to stir continuously to prevent burning on the bottom of the pan (believe me, I learned the hard way). Remove from heat and beat in marshmallows. Then fold in coconut, pecans and vanilla wafer crumbs. Using a cookie scoop, drop onto waxed paper. Let cool completely. For the chocolate drizzle, simply mix the chocolate chips and shortening together, microwave for 30 seconds, stir, then 15 second intervals until the chips are melted. Using a spoon, drizzle chocolate over cookies. Some may say the cookies are better without the chocolate, but I’m of the mindset that chocolate 🍫 makes everything better. ⁣
