🍛 Chickpea Masala Curry by @3.bunnies ❤️
1/8 cup of grape seed oil
1 1/2 tsp of mustard seeds
1 1/2 tsp of grated turmeric
3 tsp of grated ginger
1 1/4 cup of diced yellow onion
1 1/2 cups of diced tomatoes
2 cups of full fat coconut milk
2 tsp of tomato paste
3 tsp of masala powder
3 tsp of curry powder
2 tsp of cumin
1 tsp of pink salt
3/4 tsp of coriander powder
1/4 tsp of white pepper
2 1/2 cup chickpeas
1 1/4 cup of diced potatoes •
1. In a large pot on medium heat add oil and mustard seeds. Once mustard seeds pop add turmeric, ginger, and yellow onion. Stir until fragrant and mix in tomatoes.
2. Pour in coconut milk tomato paste and spices. Bring pot to a simmer and add chickpeas and potatoes.
3. Cover pot and allow curry to simmer until potatoes are fork tender. Once potatoes are cooked through add grains of choice to bowl/s (we used sorghum) top with curry and finish with fresh cilantro and lime. Serve and enjoy!

Some days I seriously wonder how acceptable it is to have lunch at 11 a.m. 🤐 (then i wait till 2 p.m. 😭) Curry shrimp 🦐🔥 INGREDIETNS:
1 TBS vegetable oil
1 onion, finely chopped
1 TBS fresh grated ginger
1 TBS chopped garlic
1 TBS curry powder
1 tsp paprika
1 tsp cumin
1/2 tsp chili powder
1 1/2 tsp turmeric
1/2 tsp dried coriander
1/2 tsp black pepper
2 cans chopped tomatoes (around 800 grams)
2 cans light coconut milk (around 800 grams)
1 tsp salt
1 Kg uncooked (peeled and deveined) shrimp
2 tablespoons chopped fresh cilantro *NOTES:
you can leave the tails if the shrimp for a better presesntation
you can also use cooked of half cooked frozen shrimp if uncooked is not available (I prefer uncooked)
Heat the oil in a large skillet over medium heat;
cook the onion in the hot oil until translucent, about 5 minutes.
Remove the skillet from the heat and allow it to cool slightly, about 2 minutes.
Add the garlic, salt, ginger, cumin, turmeric, paprika, and ground chili
Stir over low heat.
add the tomatoes and coconut milk
simmer the mixture on medium low heat stirring occasionally for about 10 minutes.
add the shrimp, cook for 5-6 mn (less if using half or uncooked ones)
add the fresh cilantro, and dried cilantro and cook for a further minute.
Serve next to white rice!
