  • Being back in Victoria also means I am spending some time in my mom’s kitchen. Made a little story of her making this Cypriot lentil-onion dish. I typically serve it with Greek yogurt, but I also love it with olives and feta. Happy Friday everyone, am looking forward to baking some Cypriot sweets this weekend.   • BRAISED & SHREDDED BEEF & CABBAGE CASSEROLE … so I had a craving for a greek dish called “SARMADES” or “LAHANODOLMADES” which is a northern greek version of cabbage leaf rolls, stuffed with a mixture of rice and minced meat, strongly-flavored with lemon and cumin … but I prepared this instead ! 
Here’s a deconstructed version. No pre-boiling of the cabbage to soften and loosen the leaves, to be later peeled off, one by one, and then stuffed with the meat and rice mixture and rolled up, piled up and finally cooked in a broth. I chose to braise the meats and shred them, as I did with the cabbage and serve it all as a heartier (and messier) casserole. I add an extra kick of mustard that incorporates an additional warmer dimension to this hearty winter dish.

COCOTTE AU BŒUF & CHOU BRAISÉS & EFFILOCHÉS … alors j’avais envie d'un plat grec appelé "SARMADES" ou "LAHANODOLMADES" qui est une version grecque (du nord) des rouleaux de feuilles de chou farcies avec un mélange de riz et de viande hachée, fortement parfumé au citron et au cumin … mais j’ai préparé plutôt ceci !

Voici une version déconstruite. Pas de pré-cuisson du chou pour ramollir les feuilles, pour ensuite être séparées, une à une, puis farcies avec le mélange de viande et de riz, ensuite roulées, empilées et cuites dans un bouillon. J'ai choisi de braiser les viandes et de les effilocher, comme je l'ai fait avec le chou, et de servir le tout comme un ragout en cocotte plus consistant. J'ajoute une touche supplémentaire de moutarde, qui ajoute une dimension plus chaleureuse à ce plat d'hiver copieux.

  • One of my favourite weekends of the year - The Lonsdale Street Greek Festival in Melbourne. Had so much fun watching Greek dancing and trying so much delicious food. One of my favourites was this skeftalias souvlaki with parsley and tomato from @the_cypriot_kitchen 🤤 Sheftalias are a Cypriot sausage laced with caul fat.

I would definitely recommend stopping by - the festival is on until tomorrow evening

  • How do you like your hellim / halloumi? I remember posting “Karpuz and hellim” (watermelon and halloumi), and there were so many comments because I had “raw” (uncooked) hellim on my plate - @oliahercules had a similar response to her delicious lunch yesterday - oh, the controversy! The truth is, us Cypriots just love it as is, in a sandwich, or with a big chunk of watermelon, or grated over pasta, and this is how my kids love it too. Recipe for my Yahnili Makarna recipe below, which is doused in hellim in all its uncooked grated beauty.

2 onions, peeled, halved, thinly sliced
8-10 Chicken thighs/drumsticks
4 peeled, bashed garlic cloves
1 heaped tsp oregano
1 level tsp smoked paprika
1 level tsp paprika
3/4 tsp salt 
3/4 tsp pepper 
2 tbsp Tomato purée 
1 stock cube
1 can chopped tomatoes 
500g Bucatini Pasta
100g grated hellim 
1 heaped tsp dried mint 
Freshly milled black pepper
Olive oil 
Preheat oven to 180C. In a large deep metal tray place onions, chicken, garlic, sprinkle over the oregano, salt and pepper. Sprinkle over spices, pour over chopped tomatoes, then in a measuring jug, mix together tomato purée and stock cube with 100ml boiling water until dissolved, then top up with another 200ml cold water. Pour stock into tray, drizzle over a really good glug of olive oil, and place on bottom shelf. After 40 mins take out tray, turn chicken over, and put back in oven. After another 40 mins, take out, turn chicken, put back in oven for 20 mins or so. While chicken is cooking, break 500g bucatini pasta into 3rds, put large pan of salted water on high heat, bring to boil, and add pasta during final 10 mins of chicken’s cooking time. Take out tray, remove chicken to a plate, drain pasta and add it to the tray, mixing it into the tomatoey sauce, until coated. Serve with the chicken, loads of grated hellim, dried mint, and black pepper. -
