Have you ever tried Beetroot Chutney??? Well, it was my first time too. Let me be honest, I don't like raw beets just like I don't like raw spinach. And since they are nutritive I definitely need to somehow add it to my meals. Now this is the pushing point that motivates me and makes me question myself that how can I do that? How can incorporate particular veggie, that I dislike, to my meals?
Then I look for every possible way in which it can be consumed and boom! That's how I get my complete nutrients from foods that I hate.
I have been adding beets to my curd/yogurt, to my carrot juice and now this chutney. And I will still keep exploring other options too.
Now the beetroot chutney is not only healthy but taste delicious too. It is little spicy, tangy and sweet at the same time. I paired it up with paneer and capsicum parantha along with curd and cooked peas. Oh jeez! I just can't explain in words how wonderful the taste was. Btw, I had this meal few days back when it was raining and my family enjoyed this combo a lot.
Do try out this chutney and lemme know how it was.
1 cup beetroot, chopped
4 green chillies
1 sprig curry leaves
1/2 tsp cumin
1 pod garlic
1 1/2 tsp chana dal
1 tbsp peanut
Salt as taste
1 tbsp oil
Lemon juice as per taste
1. Heat oil in pan, fry dal & peanuts until golden and aromatic. Then add curry leaves, garlic and green chillies, fry until leaves are crisp.
2. Set aside few curry leaves, dal and peanuts for garnishing later.
3. Now add beetroot to the pan and sauté for 5-6 mins or until beetroot is tender.
4. Let the roasted ingredients cool down for a while. Blend everything into smooth paste. Do not add water.
5. Scrape the sides, add lemon juice and blend again.
6. Serve it in bowl and garnish with the roasted dal, curry leaves and peanuts.
