⭐️Gnocchi in crema vellutata di porri e timo⭐️⠀⠀⠀⠀⠀⠀⠀⠀⠀
📝Ingredienti x 4:⠀⠀⠀⠀⠀⠀⠀⠀⠀
600g gnocchi di patate freschi⠀⠀⠀⠀⠀⠀⠀⠀⠀
80g parmigiano grattugiato⠀⠀⠀⠀⠀⠀⠀⠀⠀
sale e pepe q.b.⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 rametto pepolino (o timo)⠀⠀⠀⠀⠀⠀⠀⠀⠀
➡️Togliete la base e le foglie esterne del porro, lavatelo, tagliatelo a tocchetti (compresa la parte verde) e metteteli nella pentola insieme alle patate sbucciate, sciacquate e tagliate a cubetti.⠀⠀⠀⠀⠀⠀⠀⠀⠀ Riempite la pentola d'acqua; salate e pepate.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Accendete a fiamma moderata e fate lessare porri e patate circa 20 min da quando prende il bollore.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Scolate le verdure in una ciotola, profumate con foglioline di timo staccate dal rametto, frullate ad immersione aggiungendo poca acqua di cottura fino ad ottenere una crema liscia e vellutata.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Mescolateci il parmigiano, il burro e il latte e amalgamate bene tenendo in caldo.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Cuocete gli gnocchi in acqua salata e appena vengono a galla scolateli e tuffateli nella crema di porri. Serviteli "all'onda": cioè belli affogati nella crema.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Shiitake & Tofu Potstickers🥟🥟🥟 Yes, I’m addicted to dumplings. Pot stickers, gnocchi, ravioli, pirogies, knish, empanadas, gyoza etc.I love them all. Here are some Potstickers for your Wednesday. Fun to make and tasty to eat. Recipe: What you need: 5 ounce package of shiitake mushrooms, 3 inch wide dumpling wrappers 30-40 count, one block of pressed tofu, 3 green onions & 1/4 cup water chestnuts finally chopped, 1 1/2 tbl tamari, 2 tsp cornstarch, 1 in knob of ginger peeled & grated, 1/2 teaspoon of sesame oil, 2 tsp maple syrup, 1/4 teaspoon white pepper, grape seed oil
1️⃣ In a large mixing bowl crumble tofu with the back of a fork or use hands, then add all ingredients except mushrooms. Mix well till all ingredients are incorporated
2️⃣ Using a food processor, pulse mushrooms 3x till crumbly.
3️⃣ in a large skillet, heat 1 tsp of oil over medium high heat, then add mushrooms and a pinch of salt. Heat mushrooms till reduced about 4-5 min
4️⃣When mushrooms cool, add to tofu mix
5️⃣Time to set up dumpling stations: place lightly damp kitchen towel around stack of dumpling wrappers so they don’t dry out, have a small dish of water 1/2 inch high, dumpling filling, and a lined tray for completed dumplings
6️⃣Take one wrapper and wet edges by dipping in water, then place 2 tsp of filling in the center, and fold
7️⃣ Now the choice is yours how to fold your dumplings. I folded my dumplings by using a pinch braid technique which I demonstrate in my highlights. You can also just fold your dumplings wrapper in half with the filling and seal. They will taste just as delicious and take way less time!! 8️⃣ In non-stick pan or cast-iron heat 2 tablespoons of grape seed oil over medium high heat after about 1 minute add your dumplings.I fit about 12. Cook until lightly browned at the bottom which should take about 2 minutes
9️⃣ Using the lid of your pan to protect yourself from oil splatters, add 1/2 cup water, cover with lid and cook dumplings for another 5 to 6 minutes over medium heat 🔟Repeat steps eight and nine for the next batch. Serve with a dipping sauce. I used a mixture of tamari, rice vinegar, sesame oil and sweet chili sauce. I just mixed it to taste.

My friends and I braved the snowstorm this afternoon to get (handmade, small batch) dumplings for lunch and they were soooo good 👏🏼🤤.
I first had @steamboxdumplings a couple Vegan Fests ago and the lineup was HUGE (for good reason!!). They opened up a cute little shop less than a year ago, and you can even buy frozen ones to take home!
These dumplings are insanely good (I had the vegan & gluten free ones, and they were 💯), and I highly highly recommend them!!

1. Fish — an Increase in Prosperity
People think if they have managed to save something at the end of the year, then they can make more in the next year.
The fish should be the last dish left with some left over, and the head should be placed toward distinguished guests or elders, representing respect. The two people who face the head and tail of fish should drink together, as this is considered to have a lucky meaning.
2. Chinese Dumplings — Wealth
Legend has it that the more dumplings you eat during the New Year celebrations, the more money you can make in the New Year.
Some Chinese put a white thread inside a dumpling, and the one who eats that dumpling is supposed to possess longevity. Sometimes a copper coin is put in a dumpling, and the one who eats it is supposed to become wealthy.
3. Glutinous Rice Cake — a Higher Income or Position
In Chinese, glutinous rice cake sounds like it means "'getting higher year-on- by year"'. The main ingredients of niangao are sticky rice, sugar, chestnuts, Chinese dates, and lotus leaves.
4. Longevity Noodles — Happiness and Longevity
Their length and unsevered preparation are also symbolic of the eater's life. They are longer than normal noodles and uncut, either fried and served on a plate, or boiled and served in a bowl with their broth.
5. Good Fortune Fruit — Fullness and Wealth
Certain fruits are eaten during the Chinese New Year period, such as tangerines, oranges, and pomeloes. Tangerines and oranges is believed to bring good luck and fortune, orange - for 'success', pomeloes is prosperity.
