QUICK TERIYAKI CHICKEN RICE BOWLS By: @crunchycreamysweet 🥦@crunchycreamysweet
Better than takeout and made with just a few ingredients, this Asian chicken dinner idea is on our weekly rotation! Sweet, garlicky chicken served with rice and steamed broccoli comes together in just 20 minutes.

Serves: 4
INGREDIENTS:
1 lb boneless skinless chicken breast, cut into bite size pieces
salt and pepper
for the sauce:
1/4 cup packed light brown sugar
1/4 cup low-sodium soy sauce
2 Tablespoons rice or apple cider vinegar
1/2 teaspoon ground ginger
2 cloves garlic minced
1 Tablespoon cornstarch
additional:
rice
steamed broccoli

This has been my motto since I can remember🙏🏽📄
I’ve never really been amazingly good at anything on the first go. 
New skills don’t come easily for me.
Never really been naturally “gifted” 🤷🏽‍♀️

But the one thing I have going for me? 
DETERMINATION & PERSERVERANCE 🔥
Once I set my sights on something, there’s a “fire” that burns within me and forces me to fight until I can get it.
.
I know that if I want to reach my goals, I can’t just sit still and wait for it to fall into my lap. 
Instead, I know that I have to give my ALL and that I CANT STOP until I’ve done my absolute best to work towards my goal 💪🏽

And funnily enough? 
This method has never, ever failed me in the last. 
If you’re willing to put in the work, nothing is out of your limits. 👊🏽

今天的蔬食便當沒有主菜,因為每一道對貝蒂來說都是超好吃的主菜啊!

但總要有取捨,所以今天想與大家分享《醬燒生豆皮》的食譜😉

【材料】
生豆皮 3片200g
青蔥1-2支
蒜頭 2瓣

【醬料,調成一碗】
醬油1大匙
醬油膏1小匙
味醂1小匙
水1大匙

【調味料】
油1小匙
香油少許

【做法】
❶起一鍋滾水,將生豆皮汆燙1分鐘後起鍋,切塊後備用。
❷青蔥切段(蔥綠蔥白分開擺放)、蒜頭切成末,備用。
❸鍋內倒入油、蒜末、蔥白,以中小火炒香。
❹加入做法1,將生豆皮煎至金黃色。
❺加入醬料,拌炒至豆皮上色。
❻加入蔥綠、香油,拌勻後即完成。

🥢便當內容:可愛香菇蛋、醬燒生豆皮、辣炒娃娃菜、胚芽糙米。

昨天與編輯聊到娃娃菜,編輯說她超愛苦苦的娃娃菜!

貝蒂從來沒有買過或吃過娃娃菜(因為覺得它長的有點詭異),但基於好奇,今早也試著料理看看。

結果,娃娃菜真的是苦的耶😂,但咀嚼到最後會出現一抺甜,貝蒂好喜歡這樣的驚喜,一入口先脆、再苦、最後回甘,口感多重!

趁著娃娃菜產季,決定多吃^^

原來,放下成見,才能算是真正的認識;對於不熟悉的食材如此,對於「人」更需要如此。

  • Dumplings with a sweet & sour cabbage-mushroom filling and chili broth on top by @beferox 💛
Recipe:⠀
For the sweet & sour dumpling filling:⠀
Heat 2 tbsp canola oil in a pot over low-medium heat, added 1 small onion (chopped), 3 cloves of garlic (minced), a ca. 2 cm long piece of ginger (minced), 1/2 small cabbage head (finely chopped) and let everything cook for about 3-4 minutes before adding 200g chopped mushromms.⠀
⠀
Then, let everything cook for another minute and added 1 tsp salt, 1 1/2 tbsp. flour, 1 tbsp dark soy sauce, 1 tbsp apple cider vinegar and 2 tbsp brown sugar.⠀
Stir everything together and after ca. 5 minutes the filling was read.⠀
This recipe makes enough filling for ca. 26 dumplings.⠀

For the chili broth that goes on top of the steamed dumplings mix together 100ml vegetable broth, 1 tbsp canola oil and 1 tsp chili flakes. Enjoy!
