Ingredients: 4 boneless skinless chicken fillets, about 5 oz each 1 Tbsp avocado oil, or olive oil 8 packed cups mixed lettuce leaves 1 cup cooked fresh or thawed frozen organic corn kernels 1.5 cups halved cherry tomatoes 1/3 cup chopped pecans 4 hard-boiled eggs, peeled and chopped 1 ripe avocado, diced Sweet Onion

Dressing: 2 fresh garlic cloves, pressed 1 small sweet onion, chopped 4 Tbsps extra virgin olive oil, divided 1/4 cup apple cider vinegar 1/2 a fresh lemon, juiced sea salt and freshly ground pepper

Instructions: Heat a grill pan or an outside grill on medium high heat. Rub chicken with sea salt, pepper and a bit of oil, then add it to the grill. Cook for about 5 minutes per side, or until cooked through and no longer pink in the inside. Set aside on a chopping board, cover and rest for a couple of minutes, then slice thin. Heat 1 Tbsp oil in a skillet over medium high heat; Saute garlic and onions for 6 minutes, or until soft and golden brown. Place camelized garlic & onions in a small blender together with remaining extra virgin olive oil, cider vinegar and lemon juice; puree until smooth. Season to your taste with sea salt & pepper, then refrigerate dressing until ready to serve. In a large salad bowl, add lettuce, then cooked chicken, tomatoes, corn, eggs, pecans, and diced avocado as shown. Once ready to serve drizzle the dressing on top, and gently toss to combine. Enjoy!

INGREDIENTS:
Chicken:
4 (6 oz) boneless skinless chicken breasts
3/4 tsp paprika
1/2 tsp garlic powder
1/4 - 1/2 tsp cayenne pepper, to taste
1/4 tsp onion powder
1/4 tsp dried thyme
1/4 tsp dried oregano
Salt and freshly ground black pepper
1 Tbsp olive oil

Avocado Corn Salsa:
1 ear corn, grilled or 3/4 cup frozen corn, thawed
1 roma tomato, diced
1/3 cup diced red or green bell pepper
1/2 avocado, diced
3 Tbsp chopped red onion
2 Tbsp chopped cilantro
1 Tbsp fresh lime juice
1 Tbsp olive oil

INSTRUCTIONS:
Preheat a grill over medium-high heat (to about 425 degrees). Pound thicker parts of chicken with the flat side of a meat mallet to even out their thickness. 
In a small bowl whisk together paprika, garlic powder, cayenne pepper, onion powder, thyme and oregano. Season with salt and pepper to taste (I used heaping 1/2 tsp salt and 1/2 tsp pepper). Brush both sides of chicken breasts lightly with olive oil then sprinkle both sides evenly with seasoning mixture. Grill until center registers 165, about 4 minutes per side. 
Meanwhile in a medium mixing bowl toss together corn, tomato, bell pepper, avocado, red onion, cilantro, lime juice and olive oil. Season with salt and pepper to taste. 
Let chicken rest off of grill 5 minutes tented with foil then serve warm with Avocado Corn Salsa. By @cookingclassy

Hi Hi I still exist I promise 🙋🏻‍♂️ But I do apologize for being so deeply off the radar. This past week was one of those where I felt like I barely had enough time to breathe (work has been incredibly busy), and the insta definitely had to take a back seat for a few days. But I am happy to say that I am back and have so many fun and exciting things ahead 👏🏻 Kicked off this morning with these absolutely delicious creamy chocolate cold brew collagen oats, and man did they hit the spot💯 Packed with protein and nutrients and the taste is 🔥 And of course, had to load it with some of my favorite toppings🙆🏻‍♂️ Hope you all have an awesome week!

Enjoy warm or you can serve leftovers chilled if preferred!

Had the day off work today so thought I’d do some baking👩‍🍳 I’m not a fan of baking things that consist of 50 different ingredients and involve spending £££ at health food stores... I like to keep it simple (Mainly bcos I’m not a great baker🙃)

These cookies only need 4 ingredients that you probs already have at home! And honestly they are SO good😻 they literally take less than 20 mins to make; all you need is:
- 3 bananas
- 150g oats
- 3 scoops of choc protein powder
- 50g m&ms
.

⭐️ mash the bananas
⭐️ add the oats
⭐️ add the protein powder (I used @wheyduk rich chocolate)
⭐️ crush up 2/3 of the m&ms and add them to the mixture
⭐️ spoon onto a greased baking tray (I just spray the pan with fry light so they don’t stick)
⭐️ add an m&m to the top of each cookie and bake for 12mins at 180’ 💁🏼‍♀️

My mixture made 11 palm-sized cookies but you could make less and just have bigger cookies 🍪✌🏼

On a side note, I'm making the plunge and going off birth control. This is something I have been wanting to do for years! I went on it to help clear up my skin. I was one of those cases where I have literally tried everything: every soap/ gell/ OTC tx, lazer, antibiotics, etc. But the more I know about guthealth, the more I realize I need to address this now and stop using birth control as a bandaid. I'm super nervous but I'm so inspired by other who have done this like @thehyelife and @copinaco ! Who else has struggled with hormonal acne? Comment below or DM me!!!

I’ve always been a HUGE routine person, especially in the mornings, because I think that’s when you can get the most done 👌🏼 For me, my mornings consists of personal development 📖, goal reflecting, crushing my workout, listening to trainings to help me with my biz and then of course drinking my favorite superfoods (and coffee ☕️ of course 😜). This all happens before most people are even awake 😉 It’s not always easy but the way it’s transformed my life has been such a POSITIVE change! ☀️ What’s your morning routine?!   • Salt and Vinegar Hippeas 🤓 Another snack demolished when on the slopes last week 🎿 But on the slopes or not, these are generally one of my go to snacks as they’re a source of protein, baked not fried, no artificial preservatives and of course THEY’RE DELICIOUS 😋 (especially this flavour 😜) Even now got my whole family into them 😇

  • I tested so many salmon recipes for my ebook you’d think I hate salmon now but I think I love it even more 🥰 one of my favorite ways to cook it is with a simple marinade & some veggies on a sheet pan - like I did with these!

  • i know you’re probably getting tired of a bunch of oatmeal recipes, but 🤷🏼‍♀️ ya girl loves her steel cut oats! they’re perfect for after a workout and so good. (especially when they’re full of @gaiaherbs golden milk powder, maca, and @vitalproteins collagen!) #dEATS : organic steel cut oats + a small scoop of golden milk powder + 1 tbsp maca powder + cinnamon, 2-4 scoops collagen + water (1 cup of water for every 1/4 cup of oats). add all ingredients to an instant pot and slow cook for 7 hours. this is perfect for when you’re in a rush in the morning and don’t have time to make breakfast, you can just wake up, throw some yummy toppings on & go about your day! i topped mine with peaches, bluebs, and @freshthyme fresh ground almond butter! happy monday

I feel like some health/ wellness accounts give cardio a bad rap and almost make fun of people who do it - which isn’t cool. Sometimes I get hesitant when I post stories about me doing sprints or being on the treadmill but then I have to catch myself and ask WHY am I feeling this way? Because someone on Instagram said “stop doing cardio”?!

If you are doing cardio because you actually ENJOY doing it, then you should do it. If you hate it and continue to force yourself to do it, then please don’t - there’s a million other ways you can workout. It shouldn’t be a tool you use to “burn calories” or punish your body for something you ate so, please notice if that’s where your mindset is heading.

A huge part of being healthy is moving (and eating) in a way that makes YOU feel good, so if that means spin classes, stair master sessions or some treadmill work - then sweat your little heart out!

Personally, I find cardio a good stress reliever and will usually do a sprint session 1-2x a week or maybe some hiit plyos and always lots of walking! 💚💦

  • Enjoying my day off from school with this amazing plate for a late breakfast. Also treated myself to a hazelnut almond milk latte from a local shop & it’s definitely my new favorite coffee to order!☕️ What is your favorite coffee?? Comment down below!⬇️ I love trying new ones.

Mexican Omelette & Potatoes
Omelette:
In a bowl whisk together 2 eggs + 1 egg white (seasonings: sea salt, pepper, paprika, and garlic powder). Pour mixture into a pan over medium heat with olive oil spray. Once the bottom cooks fully, transfer pan into the oven on broil (high) until the top cooks fully. Add sautéed veggies onto one side (I used chopped onions, spinach, and mushrooms) and then fold other half of the omelette over. Top with sliced avocado, green dragon hot sauce and salsa! 
Potatoes:
Rinse and chop up some baby potatoes. Season the potatoes with extra virgin olive oil, sea salt, pepper, and oregano. Cook in air fryer at 400 degrees for 20 mins, shaking every 5 minutes or so to cook them evenly. (I make a big batch of these and have them ready for the week so I can just heat them up!) If you don’t have an air fryer, bake the potatoes at 425 for 25 minutes, flip halfway through!
