Ингредиенты:

Картофель крупный — 6 шт.
Яйцо — 1 шт.
Мука — 1 ст. л.
Грибы — 450 г
Лук репчатый — 1 шт.
Оливковое масло — 2 ст. л.
Укроп — пучок
Кукурузная мука — 4-5 ст. л.
Соль, перец — по вкусу

Приготовление:

1. Картошку почистите, нарежьте небольшими кубиками. Переложите кубики в кастрюлю с подсоленной водой. Доведите до кипения, уменьшите огонь и варите на медленном огне до мягкости картофеля, около 15 минут.
2. В большой сковороде на сильном огне разогрейте оливковое масло. Добавьте мелко нарезанные лук, грибы и укроп, посолите, поперчите и обжаривайте, периодически помешивая, 4-5 минут до коричневого цвета. Переложите смесь в миску и отставьте в сторону.
3. Когда картофель будет готов, слейте воду, а картофель оставьте в сухой, горячей кастрюле, чтобы испарилась вся жидкость, а картошка остыла.
4. Пюрируйте картофель, добавьте яйцо, хорошо перемешайте. Затем постепенно добавьте муку и перемешайте до однородности. Посолите, поперчите по вкусу.
5. На слегка присыпанную кукурузной мукой разделочную доску выкладывайте за раз по 2-3 ст. л. картофельной смеси. Сформируйте плоский диск. Положите в центр 2 ч. л. грибов. Двумя руками защипните концы картофельной массы, накрыв грибы. Обваляйте котлету со всех сторон в кукурузной муке. Повторите процесс, пока все ингредиенты не будут задействованы.
6. В сковороде с разогретым маслом обжаривайте зразы около 3 минут с каждой стороны, до золотистой корочки.

  • Tofu Wontons with Yellow Curry Broth 🍲

Recipe
INGREDIENTS
Yellow Curry Broth
1 tablespoon vegetable or olive oil
1 tablespoon minced ginger (about a 1-inch piece of ginger)
4 garlic cloves, minced
2 teaspoons yellow curry powder (mild spice)
6 cups vegetable broth*
1/2 teaspoon salt, add more if necessary
3/4 cup (175ml) full-fat coconut milk (can sub with low-fat coconut milk)

Tofu Wontons
about 45 to 50 square dumpling wrappers
1 package of firm tofu (I used a 14-ounce package)
1 1/2 tablespoons vegetable or olive oil
2 tablespoons minced ginger
1 tablespoon minced garlic
3 cups shredded green cabbage (ensure they are no longer than 1-inch pieces)
1 large carrot, grated (about 1 1/4 cups)
pinch of salt
4 scallions, sliced
Optional Toppings
chili oil
black sesame seeds

INSTRUCTIONS
Prepare the Broth: I like preparing the curry broth before making the dumplings because this allows more time for the flavors of the broth to develop.

Heat the 1 tablespoon of oil in a pot. Add the minced ginger and garlic and cook for 1 minute, stirring constantly. Add the curry powder and stir to coat the spices.
Add the vegetable broth and 1/2 teaspoon salt, cover the pot, and bring the broth to boil. Reduce the heat to a simmer and swirl in the coconut milk. Let the broth simmer for about 10 minutes, covered. Turn off the heat and let the broth sit on the stove, covered, as you make the dumplings.
Make the Dumplings
Drain the tofu and wrap the tofu around a layer of paper towels. Press the tofu by placing the tofu block on a plate and weighing it down with a stack of plates. Let it sit for 15 to 20 minutes. Remove the towels and cut the tofu into small 1/4-inch cubes.
Heat 1 1/2 tablespoons of oil in a large pan. Add the minced ginger and garlic and cook for 1 minute. Add the cabbage, carrots, and a pinch of salt to the pan and cook for 3 to 4 minutes. Transfer the tofu and scallions to the pan and add another pinch of salt. Cook for another 2 to 3 minutes. Taste the filling. You want the the filling to be a smidgen saltier than you would normally prefer. The wonton wrappers will mellow out the saltiness of the filling.

  • I almost feel like I’ve forgotten how to write one of these things. Turns out two months away from the gram will result in short term memory loss of how to do anything Instagram related, as well as loss of about 500 followers 🙃 
So for those that are still here and, by some Instagram algorithm miracle, see this post, hello and welcome back to kitchenofamelia for 2019! I’ve just returned from a fab three week holiday around the UK and Spain (working on updating my highlights to show you the good bits) and am back to work tomorrow for 2019. I had an absolutely fabulous time away, but am also excited to be home and back to some kind of routine. Three weeks of sleeping on an air mattress/hostel bunk and eating an average of one serving of hot chips per day (while travelling to some of the best cities in the world) was amazing, but I missed my bed. And vegetables. 
Today marked the return of #mealprepsunday and my first recipe was this super easy 15-minute Greek lentil salad by @pinchofyum. To be honest, if you bought tinned lentils it could be a five minute recipe, but to save waste I got mine from @goodforstore and cooked them. Then I dressed the salad with feta and @anchornewzealand yoghurt and not going to lie, I’m pretty excited to eat this for lunch tomorrow! Like the little things that add up and can cause alot of stress and chaos if allowed like the flu wreaking havoc in your family and taking you down one by one #fluseasonsucks and appliances that break down like your 7 year old refrigerator that's not supposed to break down just yet and family that come into town right in the middle of it all  I'm talking about those times
.
When I'm feeling overwhelmed I struggle sometimes to get it going but I Do with the help of my loved ones 😍 and my tools
.
What's my alternative? To not use the tools I know I have? Sure every blue moon I choose to not do anything I call those a timeout I give myself that moment or day even to reset regroup and refocus but that's for the big stuff and rare
.
The little everyday life stuff is what can be so invasive to our happiness and self care that's where we need to be aware and be mindful and take care of ourselves
.
I remind myself that my problems have solutions that I'm loved I'm healthy I will get through this just like I Do all the other little life stuff throws at me and it's all okay and that meditating eating healthy and exercising help me feel better help me think more clearly and help me be get through the little life stuff and the big life stuff
.
So whatever your self care go to tools are make sure to use them especially when you really don't want to

Especially when life is challenging that's when we need them most ❤

  • Anyone who knows me, knows my weakness for good wings. They’re just so delicious when they’re crispy on the outside and falling of the bone, not to mention a good sauce or seasoning! Wings are my go to cheat meal and my comfort food after a long day. Well my wing craving was something awful yesterday and today. Luckily I have the best instant pot recipe for quick pressure cooker wings from frozen. Then I just broil then in the oven to get them as crispy as I like!   • What is Belly Bloating? Part 1
Bloating is rather a symptom than a diagnosis itself, we all experienced it, right? 
If you always feel bloated after a big meal you might be just very full😊bloating is a natural reaction to food, however there might be an issue with digestion. Most of the food is absorbed in the small intestine, but the remains- dietary fiber and some carbohydrates- move into the large intestine, where your gut bacteria feed on and ferment it, releasing gasses that can pass out of the body as wind or build up and lead to bloating. 
Interestingly, females struggle with bloating more because food spends 47 ! hours in a women’s large intestine compared to 33 hours for men. 
But, what you eat influences the amount of gas you will produce, as well as your microbiome composition. If you are bloated all the time- it’s a likely sign of an imbalance of bacteria in your gut. 
A major cause of microbione imbalance is the lack of diversity in modern diets. 
I personally have a reaction to foods like garlic, onions, broccoli and cabbage but they will ultimately improve the balance of gut bacteria in the future!
