🔥Turn your fruit salad into a FRUIT SALAD with this honey lime dressing 🍋👌🍯

Ingredients
for 4 servings
-
1 lb  fresh strawberry , quartered (455 g)
4 kiwis, peeled and diced
2 mangoes, diced
2 bananas, sliced
12 oz  fresh blurberry (340 g)
2 tablespoons  honey
1 lime, juiced

Preparation
-
Under 30 min
Quarter the strawberries and place into a large bowl.
Dice the mango and place on top of the strawberries.
Peel and dice the kiwi. Add into the bowl.
Slice bananas and place in the bowl. Add in the blueberries.
In a small bowl mix honey and lime juice.
Pour syrup over the fruit and mix. Mix well.
Enjoy!

  • It’s been a while since I’ve stuffed my lunch into a bento. 🍱 I wish I had more opportunities to bento because I do miss it. Usually I find myself doing something different like a to go smoothie or soup as I have a jam packed day and it doesn’t usually allow me time to sit and truly enjoy my lunch. 🤷🏽‍♀️ Sometimes though...I manage to secure some lunch time and when I do I try to make it as special as possible. This bento was hoping that I could do just that. Totally looking forward to this when I get to work. 😍

Top Container ➡️ Roasted California blend veggies (broccoli, carrots and cauliflower), bell peppers, sautéed mushrooms and greens. 🥬

Bottom Container ➡️ @lotusfoods Madagascar pink rice, the leftover stewed black beans I made the other day, purple cabbage and roasted brussel sprouts. 🍱

Stewed Black Beans
1 can black beans, rinsed and drained
2 tbsp tomato past
1/2 small onion, diced
3-4 mushrooms, thinly sliced 
2 tsp @eatloisa sazon 
2 tsp oregano 
1/2 tsp umami seasoning (@traderjoes)
1 tsp maple syrup
Juice of 1/2 orange 
1 cup water
Salt to taste 🥣

Add mushrooms and onions to a sauté pan and bring it to medium heat. Allow onions to soften and mushrooms to release their water. Add in tomato paste and seasonings and allow to warm through for about 1-2 minutes. Add in beans, maple syrup and water. Allow mixture to cook for at least 2-3 minutes and bring to a simmer for 10 minutes. Turn off heat after cooking and stir in orange juice along with  a touch of maple syrup. Add salt to taste and enjoy! This recipe makes 2 servings. 🧡

  • The magic that is getting a perfectly baked plantain always means that a great meal is coming. 🙌🏽 You may find plantains that are less ripe or starchy, green peel. Or you might find them more yellow and ripe, which makes you them much sweeter. The natural sugars in the sweeter plantains allow them to caramelize quite nicely in the oven. I love the sweet variety. ☺️ To enjoy my sweet plantains, I had some chickpeas and all the veggies. 🥣

Made this plate of baked plantains (you can find a tutorial of this in my highlights on my profile) and sautéed chickpeas. I made the chickpeas as follows: Rinse and drain a can of chickpeas and place in a sauté pan (I use a ceramic pan to cook this without oil but feel free to grease pan if that is easier for you). 🥣 With a spatula, move chickpeas around heated pan to remove outside moisture. Sprinkle garlic powder, salt and oregano. Once moisture is mostly removed, add in cherry tomatoes and sauté until cherry tomatoes cook down, about 5 minutes (if it sticks you can add 1-2 tbsp of veggie broth to loosen food up). 🍅 Add in 2 handfuls of spinach and allow to wilt before removing from heat (about 1-2 minutes). Salt and pepper to taste as desired and serve with plantains. 🥣

  • no-bake S’MORES cashew butter froyo cake!! chocolate, beet, & marshmallow edition bc  #foodiefaceoff made me do it🤪 ice cream cake is always my go-to birthday cake & with how good this frozen yogurt version turned out it’s DEFINITELY going to be making a reappearance in june🎉 ps I may or may not have eaten the whole cake already lol.. & you can’t even taste the beets I promise👏🏼

R E C I P E: •
for the crust: blend 1tbsp @nibmor hot chocolate mix🍫 + 1/4c almonds + 1tsp coconut oil🥥 + 1tbsp maple syrup + 1/2 a graham cracker sheet in a food processor until almonds are finely chopped. pour into a ramekin lined with parchment paper (or a springfold pan if your fancy💁🏻‍♀️) & freeze for at least 30min.

filling: blend 1/4c cashews, soaked overnight + 1/3c plain greek yogurt + 1tbsp maple syrup + 1tsp vanilla + 1/4tsp himalayan pink salt + + 1tsp coconut oil + 1/2tsp beetroot powder until smooth and creamy. fold in 2tbsp marshmallow fluff.

  • 🇵🇹 Bem... vocês quando toca a pedir receita é logo para nos pormos em sentido! Mostrei nas stories estes muffins de mirtilo que faço imensas vezes e achei que não iam ligar nenhuma, mas tenho a caixa cheia de mensagens a pedir receita. Já sabem que eu sou péssima com receitas, não sei seguir receitas (muito pouco humildemente penso sempre “Oh, eles sabem lá, vou fazer à minha maneira!”). Estes meus muffins também são feitos a olho. Gosto imenso porque são deliciosos, mas não têm glúten, nem açúcares adicionados e nem gorduras adicionadas! Apenas banana esmagada com o garfo, ovos e farinha de milho e fermento tudo a olho para dentro da taça. Depois de colocar a massa nas formas, espetei os mirtilos lá para dentro para garantir que ficavam bem distribuídos (e até pus outros frutos vermelhos) e forno com eles. Também não sei a que temperatura nem quanto tempo, porque comigo é tudo na base do é-capaz-de-já-estar!... As fotos depois da primeira não estão nada boas porque tirei só mesmo para as stories e nem cheguei a publicar todas, mas acho que ajuda ver mais ou menos as quantidades. E lembrem-se que a banana tem de estar bem madura, quase estragada, senão não fica doce :p 🇬🇧 My banana and blueberry muffins. Gluten free, no added fat or sugar, only banana, corn flour and eggs. Blueberries in the end and off to oven it goes! And these heart shapped cake molds?! Pure love. 💛

  • 🤩Golden Turmeric Chicken Stir Fry🤩

Ingredients
500 grams chicken breast or thigh, skinless
1 pepper
1-2 cloves garlic - adjust depending on size of cloves
2-3 tsp curry powder *
1 tsp ground turmeric
1 tsp ground cumin
1/2 tsp salt
1/2 tsp pepper
1 tbsp honey
1 tbsp poppy seeds - OPTIONAL
1 tbsp chilli flakes - OPTIONAL
1 handful coriander - fresh, OPTIONAL
coconut oil for frying

Instructions
In a cup or small bowl, combine the curry powder, turmeric, cumin, salt, pepper, garlic and honey. Add 2-3 tablespoons of water and stir until you have a smooth thin paste.
Dice the chicken into chunks, roughly about 2 cm cubes. Slice the pepper into thin strips.
Heat a fry pan to a high heat and add a tablespoon of coconut oil.
Add the chicken to the pan and cook for a few minutes until sealed (i.e. no pink visible), then reduce to a medium heat and add the pepper and pour over your spice paste.
Continue to cook for a further 5-8 minutes until the chicken is cooked through. If the sauce dries up too much, just add a touch of water.
Remove from heat, scatter over the coriander (tear up and remove any thick tough stems first), poppy seeds and chilli (if using) and serve immediately with a side of veggies, quinoa and/or rice.

5. Always push myself to do more if I feel like I can because nobody knows my body better than me.

What stood out the most to me is the training John provided me with was perfect for me. It has helped me mentaly and physically and I am so greatful for it. I feel back to myself and Im much more happier in myself. I am now more confident than I ever was. My lifestyle has changed for the better. John has also helped me strengthen my knee aswell. 🙂 I couldn’t be happier with the results you have giving me. Thank you so so so much for everything and especially for your best knowledge thats the most important to me”
