This is fennel cured salmon that we’ve lovingly cold smoked, served with hot pickled fennel (using a lemongrass syrup and vinegar). Topped with a poached egg and a Granny Smith and dill emulsion. And not forgetting that all important red veined sorrel garnish! 🍃
