I had the most amazing dinner @otiumla last week! Every single dish was executed perfectly and made me wanting more! We started with this amazing hamachi dressed with ponzu, radish, cilantro and coriander! You really can’t go wrong with hamachi😍 Then we had this perfectly cooked octopus served over a delicious mole sauce, habanero onions and pumpkin seeds! Possibly my favorite dish of the night! The next dish was almost too pretty to eat!! There famous black cod was served with burnt allium, clams, potatoes, and sea beans! &&& my absolute favorite.... the PORK CHOP!🙌🏻

My first oliaigo— it’s a gazpacho incarnation of the salmorejo. A distinct bisque, but without being too chowdery or cod-dish. And look at that interpretation of the carquinyoli with a dollop of liquid black garlic. Doesn’t it look like. . false teeth!?
