Mini vegan & Gluten Free fruit loaf covered in Hou & @pudology ⭐️
What you need: • 30g dried sultanas
• 1 tsp ground ginger
• 1/2 tsp ground cinnamon
• 1 tsp mixed spice, apple or orange juice
• 10 g coconut oil
• 30 ml unsweetened almond milk
• 2 tbsp lemon juice
• 1 tsp vanilla • Pinch of salt
• 30g ground almonds
• 30g gluten-free flour blend
• 2 tsp baking powder • 1/4 tsp baking soda • Pudology Chocolate Orange Pud, Banoffee Pud, Hou's Mixed berry & Banoffee pots

Method:

1️⃣
Place the dried sultanas, ginger, cinnamon and mixed spice in a bowl and add a generous amount of apple or orange juice, until everything is roughly covered.
2️⃣
Keep covered in the fridge for a couple of hours, to let the flavours develop.
3️⃣
Place the coconut oil in a bowl and melt in the microwave
4️⃣
Once melted, add the milk to the same bowl along with the lemon juice, vanilla, salt and ground almonds
5️⃣
Sift in the flour, baking powder and baking soda
6️⃣
Add the dried sultana mixture, adding a tiny splash more milk if it’s looking too dry
7️⃣
Transfer mixture into a mini loaf tin
8️⃣
Bake in oven at 180*c for 15-20 minutes until risen
9️⃣Finally, serve with a thick layer of Pudology & HOU pots!
