Good evening. I was craving a big bowl of flavor bombed veggies after a long day. Charred Buffalo cauliflower over a bed of organic romaine with chopped celery, carrot and cucumber, a little salt and pepper and a generous drizzle of blue cheese dressing. It’s super refreshing and hydrating and filled with so much veggie goodness. Enjoy the rest of your night.⁣

Easy Buffalo Cauliflower⁣
🥦🥕🥒⁣
1 head cauliflower cut into florets⁣
Extra virgin olive oil⁣
Favorite hot sauce ⁣
Spread cauliflower florets onto baking sheet. Drizzle with olive oil and toss to coat. Sprinkle with sea salt. Bake on 425 for 20-30 minutes until edges are charred. Remove from oven and toss with hot sauce as much or as little as you like. Bake for another 5 mins. Serve on a salad or with dressing and veggies.⁣

  • A few tips you might find useful if you're EATING OUT while trying to lose weight... ☆ Choose ONE course only - you're gonna be bloated AF if you go for a 3 courser🙈 ☆ Hydrate - get the water into you, avoid carbonated drinks and alcohol with the meal where possible. They are essentially just extra  calories that you don't need! ☆ Advance planning - look up the menu online before going. They might have some healthy options, you never know🤷‍♀️ But it gives you a chance to prepare for it. ☆ Don't arrive to the restaurant MEGA-hungry!! You won't feel as "in control" if you're in starvation-mode.  You'll be too hungry to rationalise your choices🙈 ☆ You don't have to finish the whole thing🚫 (Easier said than done, I know). But seriously, as soon as you feel ANY WAY full at all, you should stop eating⚠️ ☆ Watch your portions size.  Restaurant portions can be CRAZY!!! Share that stuff out with your other half if you have to👌 ☆ Be careful of sauces/soups etc. They are often laced in cream/sugar etc. and can really hike up your calorie intake with the meal😕 ☆ Avoid deep fried foods if you can❌ ☆ For good options, look out for words like "boiled", "grilled" or "steamed".

{ a fresh one-pan meal idea that combines all that fresh crisp Summer zucchini, with a tangy garlic tomato & basil pesto.
Basically Summer in a pan! }
makes about 3-4 servings 
1 lb. shrimp, peeled and deveined 
1 Tbsp olive oil, or avocado oil 
1 fresh garlic clove, minced 
2 large zucchinis, sliced 
2 Tbsp sun-dried tomato pesto (recipe below)

For The Sun-dried Tomato Pesto 
3 fresh garlic cloves 
1 cup fresh basil leaves, plus more to garnish 
1 cup sun-dried tomato packed in olive oil 
2-3 Tbsp water 
1/4 cup fresh Parmesan cheese 
sea salt and fresh ground black pepper, to your taste

Instructions: 
Add all the pesto ingredients in a food processor or high speed blender and process until smooth. Set aside. 
Heat oil in a large skillet over medium high heat. Add garlic and cook for 30 seconds until fragrant. 
Add zucchini and sauté for about 5 minutes. 
Add shrimp and cook until they are pink. 
Add in 2 Tbsps sun-dried tomato pesto and stir everything well to combine and warm.
Garnish with additional fresh basil and enjoy!
Store leftover pesto in an airtight container in the fridge for un to 10 days.
