Posting and engaging when I have a free moment this week as I’m on a course all week - thought I would share this as I have a quiet few moments sipping my coffee before I head out the door - have an awesome Monday you guys!!👋🏼
Brown Butter Chocolate Ganache:
* 1 cup(2 sticks) unsalted butter
* 75 g semi sweet chocolate chips or chopped
* pinch of salt
* 1-2 tbsp. powdered sugar
1. Place the butter in a light colored saucepan (so you can see the butter change color) over medium heat and leave until it melts and start bubbling.
2. Continue cooking, stirring frequently until the milk solids turn brown and the butter smells nutty, about 5-10 minuter longer. Take care not to burn the butter (it will continue to brown even after you remove it from the heat, so take it off in time).
3. Pour the butter into a bowl and let cool for a few minutes, then add the chopped chocolate and salt and stir until smooth.
4. Either leave at room temperature or place the bowl covered in the fridge until the spread thickens to a soft butter consistency.
5. Beat the mixture until fluffy, and add in powdered sugar
6. Spread over chestnut bread or serve on the side to be slathered on each slice.🍫

steamed citrus cake 🍊🍰 | a fluffy, fragrant dessert to beat those Monday blues. I recently came across a Chinese orange steamed cake and was immediately compelled to make my own version of it. no oven? no problem — all you’ll need is a steamer and a bowl; recipe below!

steamed citrus cake
-1/2 cup / 120g applesauce
-1/4 cup / 60g unsalted aquafaba
-2 tbsp / 28g neutral oil
-1/4 cup / 60g citrus juice (grapefruit, orange, pomelo, etc)
-3 tbsp / 35g pure cane sugar
-3/4 cup / 90g all-purpose flour
-3/4 tsp baking powder
-1/4 tsp baking soda
-citrus slices, for decorating
Fill a large pot with water and set up a steamer basket, then grease a heat-safe bowl. Bring the water to a boil; meanwhile, in a mixing bowl, combine the applesauce, aquafaba, oil, sugar, and citrus juice. Using a hand mixer, beat vigorously until smooth and airy (less runny). Sift in the flour, baking powder, and baking soda, then fold gently with a spatula until incorporated. Place citrus slice(s) in the greased bowl and pour the batter on top. Transfer the bowl to the steamer pot, and cook on medium heat, covered, for 25-30 minutes. Let sit for 5 more minutes in the pot before flipping the bowl onto a plate. Let the cake cool inside the bowl before serving.

This is the PERFECT summer dinner! Cut up sausages and whatever vegetables you have lying around (I'm looking at you millions of zucchini!) and either put them on a sheet pan in the oven or throw them on the BBQ, as they are or threaded onto kebab sticks if you're feeling fancy! Serve them on rice with this killer satay sauce recipe and you have yourself a winner!
2 TBSP peanut butter
2 TBSP soy sauce
1 TBSP brown sugar
1/2 tsp grated fresh ginger
Pinch of chilli flakes (more if you like it hot)
3/4 cup coconut milk
In a small saucepan, whisk together the peanut butter, soy sauce, brown sugar, ginger and chilli flakes until all ingredients are combined. Add the coconut milk and whisk again.
Bring to the boil (with the element on a medium heat) and then simmer for 5 minutes until the sauce has thickened.
Serve the sausages and veggies over the rice and pour the satay sauce over.
