Vanilla Macaroons with Nutella Buttercream. 👩🏼🍳 I’m not going to pretend like these were anything close to easy. In fact, I tried to make these last night. I tried and thought I could do this because I’m pretty good at baking or at least would like to think so.
I’m an amateur for sure, but for some reason I was convinced I could make these on the first try. I was so wrong. I forgot 2 ingredients. I put the almond flour in a ninja blender without the confection sugar. It was almost a paste. UGH. I quit it hard after I half-assedly made the discs of batter on the silicon sheet. I stopped, cleaned the kitchen and was pissed and disappointed.
Cut to this morning, got everything out again, had help from my boyfriend, and we did it together.
Each step came out much better, and actually looked like what the recipe said it should at each step. I did have to redo the whipped egg whites, but I’ll take it after yesterday’s mess.
I used the recipe from @kingarthurflour for their simple macaroons and they taste great. I made a Nutella buttercream for the filling and it did not disappoint.
