{ This SUPER FRESH tasting chopped salad has a good balance of protein and healthy fats to keep us satisfied for hours!
Use mixed colors of cherry tomatoes if you can to give this a really beautiful touch!
Think about doubling or tripling this salad recipe for your upcoming parties or get-togethers.
You can prep your salad ahead, it stays well in the fridge for a few hours, and flavors actually combine and blend even better after a few hours.
Your avocado should stay nice and green for a while if it's really coated in the lemon juice/oil mixture.

makes about 3-4 servings

Ingredients:
1 lb. raw shrimp, peeled and deveined
2 Tbsps olive or avocado oil, divided
(I use avocado oil for cooking, and olive oil as the drizzle/dressing)
1-2 fresh garlic cloves, minced or pressed
2 large avocados, diced
8 oz. mixed cherry tomatoes, cut in half 
1 green chili, seeded & sliced
a good handful of fresh cilantro or flat-leaf parsley leaves, chopped
1 large fresh lemon, both juice and zest of 
sea salt and fresh ground black pepper

Instructions:
Heat one tablespoon of oil in a large skillet over medium-high heat.
Add shrimp, and minced garlic, then cook for 3-4 minutes, or just until shrimp turns pink and is no longer translucent.
Season shrimp with sea salt and pepper to taste, remove from heat.
In a large bowl add cooked shrimp, chopped tomatoes, diced avocado, sliced chili, and chopped cilantro leaves.
Drizzle with remaining 1 Tablespoon of oil and squeeze in your fresh lemon juice, add zest, then very gently toss to combine everything together.
Adjust seasonings to your taste and enjoy!

I prefer this salad eaten within a few hours of preparing, but it stays good in the fridge for a day or two. By @cleanfoodcrush

Corte as berinjelas em rodelas, deixe-as de molho na água por pelo menos 10 minutos para evitar o amargor. Depois coloque-as em uma assadeira untada (com azeite), adicione o molho de tomate por cima. Acrescente o queijo de sua escolha, o tomate cortado, orégano e leve ao forno até o queijo derreter e começar a dourar. O meu levou 15 minutos. Depois retire, acrescente o manjericão. Deixe para acrescentar o manjericão após retirar do forno senão escurece com o calor. Pronto!

1. In a shallow plate, combine chili powder, cumin, paprika, onion flakes, garlic powder and cayenne pepper. Season the chicken with salt and pepper; dredge in the homemade chicken burrito seasoning mixture; shake off excess and set aside⁣
2. In a large skillet, melt 2tbs butter. Cook chicken until golden on each side and cooked through. Transfer to plate.⁣
3. In the same pan, add cauli rice ( or any substitute that you'd like). Add more homemade burrito seasoning. Cook for a min.⁣
4. Serve with wrap (or any wrap of choice). Put our burrito chicken, egg and cauli rice⁣

  • Dumplings with a sweet & sour cabbage-mushroom filling and chili broth on top by @beferox 💛
Recipe:⠀
For the sweet & sour dumpling filling:⠀
Heat 2 tbsp canola oil in a pot over low-medium heat, added 1 small onion (chopped), 3 cloves of garlic (minced), a ca. 2 cm long piece of ginger (minced), 1/2 small cabbage head (finely chopped) and let everything cook for about 3-4 minutes before adding 200g chopped mushromms.⠀

Then, let everything cook for another minute and added 1 tsp salt, 1 1/2 tbsp. flour, 1 tbsp dark soy sauce, 1 tbsp apple cider vinegar and 2 tbsp brown sugar.⠀
Stir everything together and after ca. 5 minutes the filling was read.⠀
This recipe makes enough filling for ca. 26 dumplings.⠀

For the chili broth that goes on top of the steamed dumplings mix together 100ml vegetable broth, 1 tbsp canola oil and 1 tsp chili flakes. Enjoy!

  • Made my favorite Spicy Brussel Sprouts 😍 One of my absolute favorite ways to make brussel sprouts- packed with spice though so be careful 🤭 I make these all. the. dang. time 😂 Seriously they barely last more than a day over here 🤷🏼‍♀️ Not ashamed to admit I’ve been known to eat an entire bag in one day.. 😅 The true test of a recipe is how quickly it’s devoured 😉 -

If you aren’t a fan of spice, this probably isn’t the recipe for you 😬 If you want less spice, use less sriracha 💯 To be honest I’ve just been kind of feeling blah about creating new recipes and new eats so it’s nice to pull out old favorites like this one 🤗 Grief looks different for everyone and right now I’m being kind to myself and not stressing about not feeling creative in the kitchen. -

My mom always told me to smile at everyone, you never know how that smile will impact their day.   • Zucchini Chicken Enchilada Roll-Ups 🤤😍😋
Here's some comfort food made gluten free, low carb, and pretty darn healthy (but crazy delicious!!! ) to add to your plans! Hope you enjoy this as much as we do!

makes about 4-5 servings 
Ingredients: 
1lb. chicken breasts, or tenders
2 Tbsp avocado oil, extra-virgin olive oil 
1 yellow onion, diced 
2 cloves garlic, minced 
1 tsp. ground cumin 
2 tsp. chili powder 
1.5 cups enchilada sauce, gluten free, divided 
4 large zucchini (I used both yellow and green ones), sliced with a wide peeler, or mandolin 
1/4 cup shredded cheese 
sea salt and fresh ground black pepper, to taste

Instructions: 
Instructions: 
Preheat oven to 350ºF. 
In large skillet over medium, heat the oil. 
Add chicken breasts and cook for about 6 minutes on each side, or until cooked through and no longer pink in the middle.
Season with sea salt and pepper then set aside on a board. Once it's cooled a bit, shred it using 2 forks. 
In the same pan add in the onion and cook for about 3 minutes until translucent. Add the garlic and spices, then return the shredded chicken to the pan.
Pour in 1 cup of enchilada sauce then stir well until combined. 
On a cutting board, lay out 4-5 zucchini slices slightly overlapping each other. Add spoonful of chicken mixture on top at one end as shown. Roll up and transfer carefully to a baking dish. 
Repeat with remaining zucchini and chicken mixture. 
Drizzle the remaining enchilada sauce on top and sprinkle with shredded cheese. 
Bake for approximately 20 minutes and until cheese is melted. Enjoy!

  • Life is all about balance, and as you can see I’m trying to balance my page with some healthy options. So obviously a Lettuce Wrap came to mind. Filled with Grilled/Braised Chicken, Shredded Carrots, Red Onion, Cilantro, Garbanzo Beans (Chick Peas), and of course some carbohydrate, Rice With Egg. At first I was going to make a sauce to drizzle on top but the sauce from the  Garbanzos was out of this world and was just right to bring all these clean flavors together in harmony. This made it easier to eat healthier, and was jam packed full of nutrients and protein.
