  • {NEW} Baked Smoky Potato Wedges + Limey Avo Mash 🍟🥑 {Everytime I post potatoes, someone comments "potatoes aren't healthy" 💁 I'm happy to know that in fact - potatoes are REAL food, and a nutrient dense snack option! Treat them like a treat! Don't overdo it😂🍟😉 ! 
These homemade wedges are a FABULOUS snack for your kids + growing teens}

makes about 4 servings

Ingredients: 
2 lbs. small russet potatoes, skin on, washed well and pat dried
1 tsp sea salt, or to taste
1/2 tsp cayenne pepper, or to taste
1 tsp garlic powder
1 Tbsp smoked paprika
1/2 Tbsp dried Italian seasoning
1 1/2 Tbsps avocado oil or olive oil

OPTIONAL: mashed avocado, guacamole, marinara sauce, hot sauce, homemade ranch

I mashed 1 ripe avocado with 1 Tablespoon fresh squeezed lime for my dip

Instructions:

Preheat your oven to 375 degrees f. and add a silicone baking mat on a large sheet pan. Alternatively you can line it with parchment paper.

Slice the potatoes in half lengthways, then into wedges as shown.

In a large bowl place wedges and sprinkle with seasonings, and oil.

Toss to get them really well coated.

Arrange the potato wedges on the prepared baking sheet leaving some space in between each one so they can crisp up!

Bake for 30 minutes in your preheated oven, or just until potatoes are fork-tender and crispy-golden brown.

Enjoy them with your favorite dip! ❤Rachel

  • Ленивые оладушки-хачапури😋
✔250 г творога (у меня мягкий)
✔50 г сыра ✔2 яйца
✔2 ст.л муки (у меня рисовая)
✔половина паприки, у меня жёлтая (очень вкусно сочетается с творогом👌, но можно и без)
✔укроп или петрушка
✔соль, перец по-вкусу
➡️Творог с яйцами перемешать
➡️Добавить натёртый сыр, муку, соль, перец и мелко нарубленную зелень, измельчённую паприку, перемешать, тесто получается густое!
➡️ Обжариваем оладушки на капле масла с двух сторон под крышкой. .....

  • Sweet potato bean burgers by @thegreencreator 💚 Recipe:
Ingredients⠀
2 medium sweet potatoes, peeled and baked⠀
240 grams cooked white butter beans (rinsed and drained if canned)⠀
½ cup white onion, chopped in tiny chunks⠀
2-3 tablespoons tahini⠀
1 small ''chia egg'' (1/2 tablespoon chia seeds + 1 to 2 tablespoons filtered water, let soak for 5 minutes)⠀
1 lime or ¾ teaspoons apple cider vinegar⠀
a handful of fresh coriander (cilantro) or parsley⠀
2 garlic cloves, minced⠀
salt to taste⠀
1 teaspoon smoked paprika⠀
½ teaspoon turmeric⠀
¼ teaspoon black pepper⠀
⅓ cup nutritional yeast (flour works well such as buckwheat flour or oatmeal flour)⠀
½ - 1 cup finely chopped greens (such as spinach, parsley)⠀
toppings: avocado, tomato, garlic sauce, greens, mustard, pickles⠀
skillet: 1 tablespoon coconut oil⠀
⠀
How to make:⠀
Bake the sweet potatoes in a 170 degrees oven until tender. If you are in a rush you can also cook them, but they will be less flavorful.⠀
Add the sweet potatoes and beans to a large bowl. Use a fork to mash all well. Add the onion and keep mashing. Add all the remaining ingredients and mash more.⠀
Heat oven to 170 degrees (if you haven't done already for the sweet potatoes).⠀
Heat a skillet over high heat and add the coconut oil.⠀
Form with your hands from the batter burgers in the size you wish and place on the hot skillet. Saute 2-3 minutes on each side, just to brown them. Repeat with all the mixture.⠀
Place the burgers now on a baking sheet and bake for 10-15 minutes, until cooked through. You can pop the burgers right in the oven, but if you saute them first it will create a crispy flavorful edge.⠀
Serve the burgers with any topping/sauce you wish. You could use crispy lettuce, mustard, vegan mayonnaise, anything that you like! Serve warm!⠀

OPTIONAL GARLIC SAUCE⠀
half a cup of raw unsalted and unroasted cashews, soaked in water for about 20 minutes, drained⠀
two fresh garlic cloves⠀
a tablespoon of olive oil⠀
juice of one lemon⠀
optional some Celtic sea salt to taste⠀
Put all the ingredients for the garlic sauce in a blender and blend until smooth. When the sauce is too dry or too thick, add just a tiny bit of water! #veganfoodspace

  • Simple salmon, Brussels, and a little salad 🤗 Plus some Japanese sweet potatoes not pictured because I couldn’t wait to eat them 😅🤷🏼‍♀️ I stoked up on some today and they never last long around here 😂 I have a problem of not having any self control around them 😬 But the rest of this plate was also pretty tasty 😉 -

Made easy 6 minute salmon with @primalpalate new bae seasoning on top + easy roasted Brussels. I always stock up on frozen veggies because they are normally cheaper than fresh veggies + they last for months vs days. If you roast them right, they taste just as good! Not mushy at all which is always my concern 😐 I’ll broil mine on the bottom shelf of the oven with whatever seasoning I have out, so this time I went with the same seasoning on the salmon 💯 Takes about 15 minutes but then you’ve got leftovers 😎 Perfect simple lunch on a day of catching up and running around 👌🏻 Making paleo chicken noodle soup for E and I for dinner tonight then watching the Bachelor 😎 Who else is watching?! 🙋🏼‍♀️ -
