This combo is so darn tasty and SATISFYING...plus, it comes together FAST! So, make it for lunch or dinner today, double the recipe, and store the extra servings - so your next few days are simpler! }
makes 4 servings
Ingredients:
2 pounds large shrimp, deveined and peeled
2 cups cherry tomatoes, cut into quarters
1 large avocado, pitted and chopped
4 green onions, chopped
2 fresh limes, juiced
1 handful fresh cilantro leaves, chopped
1 Tbsp avocado oil, or extra virgin olive oil
sea salt and freshly ground black pepper
lime wedges, to garnish

For serving:
2 cups cooked brown rice
.
for the BBQ spice mix:
1 Tbsp. smoked paprika
1 tsp ground cumin
1/2 tsp cayenne powder
1/2 tsp garlic powder
1/4 tsp sea salt, or to taste
.
Instructions:
In a large glass mixing bowl place shrimp and BBQ seasoning ingredients and gently stir well to combine.
Set aside for just a few minutes.

In another bowl, add chopped tomatoes, avocado, onions, cilantro, lime juice, sea salt and pepper. Very gently toss to combine.
Set aside.

Heat oil in a large skillet over medium-high heat. Add shrimp and cook for 1-2 minutes on each side or until they've turned pink and form a nice lightly charring in spots as pictured.

Add 1/2 cup cooked brown rice to each bowl or meal prep container.
Then divide the cooked shrimp and avocado salsa equally, and nicely among the 4 bowls, or meal prep containers as shown.

Serve immediately, or refrigerate for up to 3 days.

The last few days we’ve eaten many meals that looked like this. Quick and easy is the name of the game over here! We’ve got two slices of @simplekneads_gf pumpernickel bread. One with crunchy almond butter, banana and cacao nibs and the other with @majesticgarlic sprouted hummus, avocado, micro greens and sesame seeds. Kekito de plátano y chocolate 😋
- 1 huevo + 3 claras.
- 50 gr de avena en hojuelas.
- 1 cdita de polvo de hornear.
- 1 plátano - 1 cda de cacao al 70% - Canela, vainilla y stevia al gusto.
- 1 cdita de nibs de cacao y almendras en hojuelas para el top (opcional).
licuas todos los ingredientes menos el plátano, nibs y almendra en hojuelas.
En otro plato aplastas el plátano hasta que quede puré y le pones la mezcla de la licuadora. Al horno por 180° durante 20 min y listo 🤩😉
Potatoes 😍 Such a quick and easy snack or side dish to whip up! Slice potatoes into 1/4 inch thick circles, place in a single layer on parchment paper on a baking tray, drizzle with a little bit of olive oil, salt and pepper- bake @ 400 degrees for about 30 minutes- and that’s it! Super easy and delicious! (Ps- you can add any spices you’d like- I chose to keep these nice and simple 🤗) .

I’ve spent my day packing, cleaning, and solidifying the rest of our plans in California. I don’t want to go to the market because I leave early Wednesday morning. Cooking doesn’t always have to be labor intensive or full of veggies. Sometimes eating is about using what you have at home. I ordered my first @brandlesslife order a few weeks ago. This was the perfect time to try out the roasted garlic pasta sauce. I also tried @barilla chickpea rotini for the first time. I am so excited that chickpea pasta is becoming more common. The alternative is normally corn or rice based pasta which are terrible. Eating gluten free doesn’t have to be expensive and difficult. I definitely recommend this pasta. I’m going to try all the kinds. If anyone is LA based, let me know what farmers markets/ vegan gluten free restaurants to try out! 🍝

There was a time when I would say Ewww! to any and all smoothies that were green. In my opinion they were one of the nastiest things I had ever tatsted. 🤢 Now, I'm throwing matcha and spirulina in with some banana and a little extra frozen fruit, and I think it's one of the greatest ways to start my day. It's not only a super healthy, but it actually tastes quite delicious. #notevenkidding
Thanks to some handy dandy silicone molds (which I put in my profile link in case you want to make them too), I was able to #healthify the chocolate kiss! And they turned out so beautifully. I love when I create a recipe that is really two recipes in one. No-bake peanut butter thumbprint cookies coming your way soon! Ingredients list 👉 in case you want to get a head start 🙌
Chocolate Coconut Yoghurt "Cheesecake"
makes one mini cake, double recipe for a full sized cake:

Base
1/2 cup almonds/walnuts
4 medjool dates
3/4 tbsp cacao powder
1 tsp rice malt syrup
.
Filling:
1 cup cashews, soaked for a few hours
1/3 cup coconut yoghurt (I used @purecocobella)
1/3 cup coconut oil
1/3 cup rice malt syrup
2 tbsp cacao powder
1 tsp vanilla
tiny pinch sea salt
.
Process the nuts until they form a nut meal. Add the remaining base ingredients and process until the mixture comes together. Press into the base of a lined springform cake tin.
To make the filling, drain and rinse the cashews well. Add them along with all the other ingredients to a high powered blender or food processor. Blend until completely smooth. Pour into the cake tin and tap it gently on the bench to remove air bubbles. Place in the freezer to firm up. Will probably take a few hours or just leave it overnight. Defrost it enough to remove from the tin, just 5 mins out of the freezer should do it. Decorate it with melted chocolate and fresh berries if desired. Let soften at room temp before enjoying. Can be stored in the freezer or fridge as it is best kept cool to prevent it softening too much. Enjoy!

Ingredientes:
* ½ taza de fresas
* 1/3 T aceite de oliva
* 1 C vinagre balsámico
* Jugo de 2 limones
* 2 C miel de abeja

Rhubarb; the first of the season made an appearance at yesterdays farmers market. A short season & the sight of it lifts my spirits as proof things are starting to grow above ground again. Traditionally in England we eat this stewed served with cream or custard & shortbread biscuits. Italians call it ‘rabarbo’ & savour it in crostata, lattice topped sweet pies or delicately paired with panacotta. Its wonderful infused with orange, ginger or cardamom flavours, poached in rosewater served atop rice pudding, muesli or pancakes. I’ll be sharing some meal ideas including frangipane, salsa & smoothies to help you make the most of this crop. It. needs to be flavoured or sweetened but that doesn’t have to mean processed sugar, the herb Sweet Cicely (Myrrhis odorata) or sweet chervil has a slight aniseed flavour & can be used to sweeten and reduce acidity of any stewed fruit. Not only is rhubarb a welcome change for the palate but these are some of the best nutritional benefits.

Had some really ripe bananas 🍌 in the house... so, decided to try this recipe I found online.
