✔1/2 taza de galletas de miel trituradas
✔2 cdas de manteca derretida
✔1 cda de azúcar
✔1 paquete de 4 porciones de gelatina de limón
✔3/4 taza de agua hirviendo
✔1 y 3/4 tazas de requesón
✔8 onzas de queso crema
✔8 onzas de crema para cubrir tortas
1⃣En un recipiente pequeño mezcla las galletas, el azúcar y la manteca derretida. Agrega la mezcla a una placa para horno, presionando para formar una capa pareja y fina.
2⃣Refrigera hasta que esté firme (más o menos 20 a 30 minutos).
3⃣En un recipiente grande combina la gelatina y el agua. Revuelve hasta que la gelatina se disuelva y reserva.
4⃣En la procesadora mezclar el requesón y el queso crema hasta que se forma una crema suave y esponjosa. Agrega la gelatina y la crema para cubrir tortas hasta lograr una crema homogénea.
5⃣Vierte la crema en el molde, cubre y refrigera hasta que esté firme (30 a 45 minutos). 👉🏻Síguenos en @vix.yum.espanol
Chicken breasts or tenderloins
2 cloves of garlic (minced)
Salt and pepper
Chicken stock (optional)
1. Finely shred the onion and the carrots with a grater and sauté in olive oil in a large pan or skillet.
2. Add the garlic and then the mushrooms and stir until the carrots are cooked.
3. Season the chicken with salt and pepper and slice into cubes or any shape of your choice.
4. Move the carrots and mushrooms to one side and add the chicken to the pan.
5. Flip the chicken to the other side in about 3 minutes or when it starts to turn golden brown and reduce the heat to medium.
6. Add 1 tsp of cinnamon to the chicken and veggies and give it a stir.
7. Add about 1.5-2 cups of chicken stock (or hot water) to the chicken.
8. Reduce the heat to low, cover the pan and let it simmer for about 20 minutes until the sauce thickens.

I figured it was time to be fully transparent with yall!
This is my now, my before was worse.
I have been on and off changing my eating habits since Thanksgiving.
I LOVE my sweets and bread with butter.
I cant promise I'll stick to it, I cant promise I wont fall on my ass time and time again but I CAN promise to keep trying. If you are on a journey similar you are NOT alone! Feeling alone in your journey sucks and makes it harder to keep up and easier to say "fuck it" and eat whatever. I want you to know that it's ok to slip up but I don't want you to beat yourself up over it! I want you to do better at your next meal!
My goal is to be a lot smaller than this by May. It's almost March which means working hard. My plan is to start working out again.
Hopefully I can keep it up!

A foto não saiu tão boa assim, mas é uma Burrata que fiz onde o stracciatella era uma "cortatelli" (piquei o queijo em nó ao invés de fazer os fios da stracciatella) de mozzarella em nó de ervas finas e uma salada verde. Ótima opção para sábados de manhã tomar aquele café da manhã.
The photo did not look so good, but it is a Burrata that I made where the stracciatella was a "choppetelli" (I chopped the knot cheese instead of making the strings of stracciatella) of knot mozzarella of fine herbs and a green salad. Great option for Saturday mornings to take that breakfast.
Well it’s been a hot minute since I meal prepped. Mostly because church switched to 9 and I got used to doing it before church but our ward split on Sunday 😭 and now we are back to afternoon church #napkiller buuuttt at least I will once again have lunch everyday 😬. Ive been really hard on myself the last little bit when it comes to eating, the way I look and just beating myself up about it. But that’s not what I am about. I need to practice a little more self love and a little less self loathing. I need to eat it if it makes me feel good and not worry about it after. Food fuels our body but it’s ok to enjoy it to. ❤️ lunch: avocado egg salad with tomato and balsamic dressing; protein snack box.
