Can we make toast Thursdays a thing? Because I may or may not have eaten these waffles like toast 👀 — these waffles were crisp on the outside yet chewy on the inside! Topped them with some fresh bananas, goji berries, and chipped pistachios before finishing off with maple syrup. I’m still working on the recipe but it’s definitely going to be in my ebook!

I share a lot of my recipes here and I just want to talk about how much I enjoy the challenge of making recipes with the simplest and most accessible ingredients. Why? Because I know that not only is it difficult (especially for us Filipinos) to find products like vegan butter or yogurt in the market since sadly, there are no mainstream brands here yet; but I know how expensive they can be too. I remember reading through recipes and always seeing certain ingredients I had no access to, which made me pretty sad because I couldn’t make it. So now I really want to ensure that you had access to the ingredients listed on my recipes. So I really try my best to make each one with really basic ingredients that are available no matter where you’re from!

P.S. possibly the toughest ingredient to find in some of my recipes is nutritional yeast 😅

We are the biggest hummus fans, and we just love @lantanafoods variety! Especially their Beet, Sriracha Carrot, Edamame and Yellow Lentil flavors. Don’t they all look and sound awesome? 💓 This hummus is so bright, savory, spicy and delicious and they pair perfectly with any sliced veggies. The mmm goes on forever and the party never ends…
Just LOVE everything in our hotel in Vejer. From the immaculately designed rooms to the cool rooftop terrace (that turns into a pool in the summer) to the beautiful Andalucian breakfast of Jamon, feta cheese, crushed tomatoes, toasts, yoghurt, fruit and a freshly squeezed orange juice. And a coffee of course (actually I asked for an English breakfast 🙈 but I recommend doing it authentically and ask for a coffee like Ben has done here 😂). Ridiculously quick and easy spinach and feta quiche.😜

6 extra large eggs
1 Cup of cream
1 Cup cooked spinach (approximately 250g uncooked)
2 disks of feta cheese
1 tbsp basil pesto
Salt and pepper to taste

Put the spinach and drain the water. prepare your pan with spray and cook and place the spinach in the bottom of the pan. Crumble the feta cheese over the spinach. Whisk the eggs and cream together. Add 2 tablespoon of basil pesto and for the mixture over the spinach. Bake in the oven for about 20-25 minutes at 180 degrees Celsius.
