3 charred onions
Bunch of charred ginger
1tbl corriander seeds
1tbl fennel seeds
1 cinnamon stick
7 star anise pods
4 tbl brown sugar
.5 cup fish sauce
Add fat handful of cilantro at the end
30mins instant pot
Salt will likely be needed at the end along with more fish sauce. Add that until it fits your taste

What's for dinner? Instant Pot Corned Beef and Cabbage (Carrots and Sweet Potatoes). Getting ready for St. Patrick' Day! Don't think this will last that long.
Why does it seem that we only have corned beef in March? Reason #1 - Not always easy to find. #2 A bit pricey "Off Season". But if you can find it - - It is great any time of the year. I picked up ours about a month ago (been storing in the freezer) at BJ's for $4.99 lb. Not too bad and we'll get a few meals out out it.
One of the best ways to cook corned beef is in an instant pot and I love my instant pot!! I used @familyfreshmeals recipe as a base recipe. Pretty simple and straight forward. The only change I made was switching out the potatoes for sweet potatoes.
Really turned out great. The meat was so tender - - can't wait for leftovers. Do have to admit that the veggies were overcooked - oh well.

We normally don't eat pot roast on a Friday night, but this meat was sell by yesterday and I didn't want to put in the freezer, aka the great abyss to never be seen again 😂
Also the fact I can have a pot roast on the table in an hour using an instant pot after remembering at the last minute it needed to be cooked and it taste like it's been cooking all day still amazes me. Haven't added up the points yet....
Tried another fermenting project thanks to February’s #fijchallenge . I made yogurt in the #instantpot ! Second picture shows how I polished off the remains of a jar of Cherry Lime Jam from the fridge. Not bad for a first attempt! And relatively easy!
Instant pot monggo beans (Filipino monggo Guisado)
The kind of food I’ve been posting tends to be the really delicious but not very photogenic lol. This one does not look fancy but I can assure you it is so delicious! Mung beans have lots of vitamins, minerals and antioxidants!
Let your instant pot preheat on high in sauté mode. Once it is ready, add some oil and sauté your pork, s&p to taste) just until browned.
Add garlic (I did 5-6 cloves) and diced onion and sauté just until onions are translucent.
Add 1 part mung beans (I used whole and had about 1 3/4c), 3 parts water (1 3/4x3=5 1/4c water) and a diced tomato.
Cover and cook on HI pressure for 20min. When cooking time is up, do a controlled quick release (releasing pressure slowly by using the handle of a wooden spoon under the steam release valve). Turn off, then switch pot to sauté “less” so we can keep a simmer going. Add sliced bitter melon, greens (I used some frozen spinach), fish sauce (about 2T), s&p to taste. Simmer until bitter melon is cooked.
One of my favourite healthy and flavourful chicken recipes is this Chicken Stew. I call it a stew because I have no idea what else to call it. It’s chicken cooked until it melts in your mouth with a bunch of vegetables that become a delicious sauce. .
