🍪 GUILT-FREE DOUBLE CHOCOLATE CHIP COOKIES!🍪
I’m a huge stickler when it comes to pastries. When I was in culinary school I was trained working with gluten, eggs, sugar, and everything that I’m trying to avoid these days. So ALL the recipes that I’ve perfected over the years are useless to me right now! (Unless I’m making them for someone else). Today I was SO excited because I think I’ve perfected another cookie recipe! Except these are GUILT FREE!🍪

• 5 Tbsp aquafaba [liquid from a can of chickpeas/garbanzo beans]
• 1/2 tsp baking soda
• 3/4 cup coconut sugar
• 1/2 cup cocoa powder
• 1 tsp pure vanilla extract
• 1/2 cup almond butter [no other ingredients, just nuts!]
• 1/2 cup semi-sweet chocolate chips [use vegan, dark chocolate or low sugar if desired]
• pinch of salt
• peppermint extract or oil [I added 1 drop to 1/2 the recipe so I had 1/2 original + 1/2 thin-mint]
1.) Preheat oven to 350F. Combine almond butter, aquafaba and vanilla in a large bowl.
2.) In a separate bowl, whisk together baking soda, coconut sugar and cocoa powder.
3.) Add dry ingredients to wet ingredients and mix with a spatula until combined. [there is no gluten in these cookies so you cannot really over-mix them and make them tough but I still don’t recommend over-mixing them because it will decrease the effectiveness of the baking soda.]
4.) To make it easier to work with, you can refrigerate the dough for 30 minutes or freeze it for 10 minutes. Drop rounded spoonfuls of the dough onto a cookie sheet lined with parchment paper.
5.) Bake anywhere from 7-12 minutes depending on cookie size. I baked mine for 7 minutes and they were relatively small sized balls of dough. I prefer my cookies to be chewy, however if you like them crunchier the leave them in longer. Be careful not to overbake.
6.) Recipe yields 2 dozen cookies. ENJOY!
