Recipe: 
Japanese Sushi Rice
3 cups uncooked Japanese rice
1/2 cup rice wine vinegar (this type of vinegar is essential)
3 tbsp white sugar 
1 1/2 tsp sea salt .
Preparing the rice
1. Wash the Japanese rice 2-3 times with water. 
2. Cook in a rice cooker. 1 cup rice = 1 cup water)
3. While the rice is cooking, pour rice vinegar, sugar and salt into a large wooden or ceramic bowl. Mix well. 
4. Once rice is cooked, add into the vinegar mixture and mix well. The hot rice will easily absorb the mixture.
5. Cover the rice with a damp towel. Refrigerate for at least 1 hour. Cover with a towel or cling wrap then refrigerate.

Wrap the Japanese sushi rice in nori sheets filled with the “Katsu” which are actually breaded hot and spicy vegan fillets from Quorn, carrot ribbons, and some lettuce. Finished off with lots of sesame seeds and homemade teriyaki sauce!

ONIGIRAZU | serves 2
•
INGREDIENTS:
2 nori sheets
4,5dl (2cups) sushi rice, cooked
3 tbsp rice vinegar
2 tsp sugar
1 tsp salt
4 lettuce leafs
carrot, grated
cucumber, julienned
1 avocado, sliced
Omelette:
1 tbsp sesame oil
2 eggs
3 tbsp water
1 tsp salt
Topping:
black or white sesame seeds
chilli mayo

METHOD:
1️⃣ Cook the sushi rice according to package. Cook rice vinegar, salt and sugar in a pan on low heat. Stir until until salt and sugar dissolves. Add the mix to the sushi rice.
2️⃣ Mix egg, water and salt in a bowl. Put a small skillet with sesame oil on medium heat and cook until top of the omelette is no longer runny. Fold and put aside.
3️⃣ Put a nori sheet shiny side down on a on top of a cling film (a little bigger than the nori sheet). Grab a handful of rice. Place it in the middle of the sheet (Don’t forget to leave space around for easy wrapping). Layer up starting with the lettuce, carrot, cucumber, omelette and avocado. Top of with a handful rice. Use your hands to form it into a compacted square.
4️⃣ Fold each corner of the nori sheet tightly around the fillings. Wrap the cling film tightly around the nori ball and let it rest for at least 10 minutes.
5️⃣ Cut in half and drizzle sesame seeds and chilli mayo on top. Enjoy!

Mi elección ha sido el TONKOTSU MISO RAMEN❗️ Fideos con caldo de cerdo, salsa miso, chasu, tamago🥚, nori, verduras, bambú, brotes de soja y cebollino y esque.. estaba para morirse.. de los mejores Ramen que he provado🔝🔝! Caldo y fideos inmejorables! En serio, el caldo es de una densidad nunca vista 🎖

Y para finalizar dentro de sus singulares postres me he decantado por el flan de sésamo, textura y sabor peculiares! Y un sabor que no te dejará indiferente✨

Carta no muy extensa pero con varios platos diferentes de Ramen, tapas y postres! Tendremos que volver a probar el resto que seguro que nos seduce 💛

  • Vegan maki rolls with millet🥢. I never knew kids could like sushi but they do - at least ours. They love it, even our 1,5 year old eats these like other kids eat their french fries. I learned maki-making from a Korean friend of mine 10 years ago and have since slowly developed this own version of mine.

I soak the millet over night and then cook it, add himalayan salt, apple cider vinegar and olive-, hemp-, coconut- or flax oil. 
If I want a raw version in stead of millet I use seed mixture with pumpkin- and sunflower seeds (sometimes with some almonds), himalayan salt, water and garlic. From the raw version I leave the following sauce away.

I make sauce usually like this:

1 cup cashews/sunflower seeds soaked
3 tbsp lemon juice
1 tbsp apple cider vinegar
1/2 tsp himalayan salt
2 crushed garlic cloves
1/4 onion
1/4 cup filtered water
5 tbsp cold pressed olive-/hemp- or flax oil
1 tsp organic dijon/wholegrain mustard
Black pepper

Mix all ingredients except oil in a blender. When smooth pour in the oil while blender runs slowly.

Spread the millet or seed mixture thinly to the noris, about half way. Then add the sauce and thinly sliced vegetables as for example:

Carrots raw or fried soft in a low temperature with coconut oil
Cucumber
Bell pepper
Sauerkraut
Some greens like spinach or chard
Sprouts
Avocado

Roll and cut the noris.
