Kale cuit à la poêle (avec de l’huile d’olive et du jus de citron), saumon au four et pommes de terre rôties 🐠🌿
Good afternoon friends and Happy Sunday! Hope you are having a great weekend. It's currently snowing here in Chicago which means it's the perfect time to stay in and do some baking! From time to time I am asked "Nate, why do you love baking?" and the answer is quite simple; it's therapeutic. Since making my first batch of flourless chocolate chip cookies over 6 years ago, I have fallen deeply and madly in love with the confectionary process. I love the sweet science of it. How simple ingredients can be prepared in such a way that a variety of different dishes can be created is astonishing to me. But more than that, it's a way for me to step away from the hustle and bustle of life and just be in the now. .
The term 'self-care' is a popular term in today's lexicon and I have started to truly relate to it. It's important to take time for yourself, step away if need be, and just process. It can be as simple as going to a local coffee shop and reading a book (or finishing up a presentation if you were me yesterday) or taking a walk through the park (preferably in warmer weather haha). Life is stressful. Life is hard. For me, it's finding those moments to step away, just for an hour or two, and bake. Just me and the recipe. Baking recharges me and I'm ready to step back into reality with a pie or cake in hand. .

It's so easy to make it. All you need is a good quality Italian 00 flour, yeasts, water, olive oil, salt and a little bit of patient😉 PM for recipe!👍
You don't know where to find double 0 flour, fantastic Mozzarella, Smoked Scamorza or San Marzano tomatoes for pizza sauce? So grab your bike, Luas, car or just take a walk and visit Little Italy on Smithfield😀 And don't forget to grab some good Prosecco or red wine for your pizza😁

Sure, this is a throwback from last summer, but we’re currently at the beach and eating a similar spread. This girl loves a good weekend away in the suburbs with friends 🤗. Enjoying our Sunday sleeping in, branching in our pajamas, and laying low all day. Hope you all have a wonderful weekend!

Die Erde erwacht so langsam, zu neuem Leben.
Jedes Jahr aufs Neue, erfüllt das auch uns Menschen mit frischem Mut, neuer Energie und Lebensfreude.
Die ersten Sonnenstrahlen werden aufgesogen, und blickt man in Gesichter, sieht man, wie froh wir doch sind, die graue Zeit erneut überstanden zu haben.
Dieses Wetter hat mir Lust auf Karottenkuchen gemacht. Der gehört für mich irgendwie zum Frühling.
Eigentlich ist es ja noch Winter, aber für mich ist das dieses Jahr das, was an Frühling spürbar sein wird, da ich direkt in den Hochsommer springe, sozusagen 🙌🏻☀️✈️ Da ich allerdings auch Pancakes wollte und ich nicht weiß ob ich die Tradition des #pancakesunday auch in Thailand weiter führen werde, gab es diese Karottenkuchen Pancakes. Oben drauf gezuckerte echte Möhren.

I feel like i discovered the biggest life back when I started getting into the habit of #mealprepping . 🙌 Saves so much time not having to cook every single day, reduces #foodwaste , keeps me from reaching for processed foods when I'm hungry since #homemade snacks are already available, but most importantly - way less chaos getting dinner on the table when you have hungry kids wanting your attention. 💯
I’m so proud of what my good friend — Chef Mike Noll has accomplished with his exciting new restaurant @mikenoll_bardo — Bardo in Charlotte, North Carolina @bardorestaurant — We first met at my original underground supper club, Sous Rising in Chicago. He was my talented sous chef and we cooked side by side all the way. I can honestly say that I couldn’t have done it without him. He is a deeply loving father and a dedicated husband.
