Ingredients:
Crust:
2 cups (280g) almonds
1/2 cup (40g) cacao powder
1/2 tsp salt
1/4 cup (50g) coconut oil
Optional: 2 tbsp maple syrup

Filling:
6oz unsweetened chocolate
2 cups (480g) almond milk (or milk of choice)
1 cup packed (200g or about 12 dates) pitted medjool dates
For the crust, blend the nuts, cacao powder, and salt until coarsely ground.
Add the coconut oil. Blend/stir until the texture is moist and crumbly but holds together when pressed.
Press into the bottom of a pie pan and up the sides, reserving about 1/2 cup for topping.
For the filling, blend the milk and dates on high until very smooth.
Melt the chocolate.
Add melted chocolate to the blender and blend until combined.
Pour into the crust and smooth the top. Sprinkle with the remaining crust chunks and chocolate chips. Drizzle with melted chocolate.
Refrigerate or freeze overnight, or for at least 8 hours.
Dust with powdered sugar or coconut flour.

Going on holiday, had some bananas to use up. Made these choc chip cookie dough for the kids for our journey. My son has already started on them before we left.
Cookie balls ingredients
I didn't use any exact amounts, I blended the bananas first and then kept adding dry ingredients until it formed a dough.
2 very ripe bananas,
Oats
Ground almonds
Cashews
Coconut flour
Salt
Vanilla essence
Chocolate chips
Recipie
Blend 2 bananas in food processor, add oats, cashews ,
almond and coconut flour, pinch of rock salt, vanilla and blend.
Pour into bowl and mix in chocolate.
Roll into balls and put into fridge to set.

INGREDIENTES 🌿SALSA 1 cebolla picada, 1/2 pimiento morrón picado, 1 tomate picado, 1 Rama picada de apio, 1 zanahoria picada, 2 dientes de ajo pequeños o 1 mediano, sal, 1 chucharada de salsa de soya o tamari, pimienta, comino, orégano, hojas de laurel, 1 cucharilla de azúcar morena y vino tinto (opcional) del que tengas al gusto.(TIP❤️ Para escoger vinos, lo que yo hago es consumir los productos artesanales, averiguar bien los componentes si son aptos para veganos, en mi experiencia lo artesanal me resulta mejor), salsa de tomate, agua o caldo vegetal al gusto, carne de soya al gusto hidratada, hongos secos comestibles (opcional) en algunos países se los llama hongos secos chilenos y Fideo pasta spaguetti cocidos (yo ocupé fideos de quinua libre de gluten ) usa el que te guste más.
PREPARACIÓN🌿 En una cacerola a fuego medio, sofreír por unos minutos hasta dorar, con unas gotas de aceite vegetal o agua, la cebolla tomate, zanahoria, apio, pimento morrón, ajo, pimienta, comino y salsa de soya o tamari
Una vez dorados, licuar o triturar, el licuado volver a agregar a la cacerola, junto con agua o caldo vegetal, carne de soya, hongo hidratado con agua caliente, lavado y picado, salsa se tomate, hojas de laurel,vino, orégano y rectificar condimentos. Dejar cocinar por unos 15 a 20 minutos y servir con fideos.
