Sheftalia. These are traditional Cypriot sausages, made with a mix of ground lamb & pork, wrapped in caul fat. You can find them all over Cyprus and in many Cypriot shops in London, but very difficult to find at any restaurant in the states.
I was missing home and craving some, took me several days, phoning a lot of butchers, and a deep dive into some food forums to track down the caul fat, but I finally found some at 99 Ranch. They are much better on the grill over coals, but since I cut a bit too much fatback into my mixture (evident by the pool of grease in the pan I had to switch to) I nearly burnt down the apartment from all the fat flares on my tiny propane camp grill!

I remember eating Sheftalia as a kid. I grew up near Green Lanes in London which is a very Turkish area. It’s a Cypriot sausage encased in caul fat. It’s made of a mix of lamb and pork. Simply seasoned with salt, pepper, red onion and parsley they are incredibly moreish.
