  • Personally I am not the biggest fan of the deep fried chicken wings(with or without any coating). Since wings are quite fatty, I tried to look for recipes that used the excess fat to its advantage. 
The one that piqued my interest required overnight drying on a rack in the fridge and then cooking them in a very high heat in the oven. The impatient and not so organized person that I am, I looked for a shortcut. 
So I wash and drain my wings for 15 minutes, then very lightly salt them for another 15 minutes. Then really thoroughly blot them with kitchen towels, spread them skin side up on an oiled aluminium covered baking sheet and bake them at 230 degrees C for 30 to 45 minutes (checking every 5 minutes from the 30 minutes mark) and pull them out once the skin is nice n golden. This renders down the fat from the wings and yields the crispiest skin. And  you get some lovely rendered chicken fat that you drain off the baking sheet and use it later. Win win I say. All this without any extra oil!

These wings are super versatile and you can toss them with any kind if sauce that you like. My daughter loves them with store bought honey bbq sauce. 
I love to experiment with flavors for coating. The sticky wings were inspired by Thai flavors. Perfect combination of heat, sweetness and saltiness umami. 
Cooking oil 1.5 tsp (I used sunflower oil)
Chopped garlic 4 fat cloves
Hot red chilli finely chopped 1 to 2 (depends on your spiciness tolerance)
Finely chopped kaffir lime leaf or tender part of lemongrass bruised and finely chopped 1 tsp
Thai fish sauce 4tbs (mixed with 2tbs of water)
Finely chopped green part of sprig onion 2 the
White sugar 3 tbs
Baked chicken wings 500 grams (before baking)

Heat the oil and throw in the garlic, let it gently sizzle till you start smelling the garlic.
Add the chili and lime leaf or lemongrass and keep cooking till the garlic just starts to turn brown. 
Add the sugar and stir till the sugar caramelizes.
Immediately add the fish sauce. It will sizzle and the sugar will seize. Stir vigorously and  throw in the wings and coat with the sauce quickly.

Serve hot with spring onions sprinkled on top.

  • Today marked the first full day in Bangkok, Thailand. Seeing my first Wat, monk, the worlds largest reclining Buddha, having my first ever street food and Chang beer  and so many other firsts, this was a day I’ll never forget. Being with 2 people that mean so much to me made it even more special! Ending with a Thai foot massage didn’t hurt either!
