  • Lemongrass hoarding in the market today for paitum (Mindanaoan burnt coconut paste with chillies garlic, galangal, lemongrass, and turmeric) and kroeung (Cambodian lemongrass paste made with kaffir lime leaves, garlic, galangal, shallots, and turmeric). I’ve only discovered the Mindanaoan cooking technique of burning coconut when I first sampled chicken pyanggang (chicken stewed in burnt coconut paste an coconut milk, then grilled) five years ago, and I wasn’t into cooking back then. I learned how to make kroeung first, and I now find making curry pastes from scratch absolutely worth it. #cambodianfood #khmerfood #filipinofood #pinoyfood #asianfood
