I am writing the recipe for same in short and sweet way, I have never tried my hands on it.... But yes have got all steps from Dadi and hopefully will go n shoot video for same one day soon 😘 and also try making it by myself 🙈

"My Dadi's Special Undhiyu" 😘 enjoy

• Veggies to cook on slow flame (main)
Proper Oil to cook
Surti Eggplant 
Potatoes
Kandh (Purple Yam)
Surti Papdi (rub in lil salt)
Desi Valor (rub in lil salt)
U have to cover this with a plate on top of with lil water in that plate, make sure u don't keep opening this again and again and very important point that this should be cooked completely without water. Try that not even a drop of water enter this as veggies should not get sticky or should not be over cooked.

• Muthiya 
Aata and Besan (wheat flour and gram flour)
Clean chopped watery fresh methi (Fresh fenugreek)
Regular masalas (haldi, Dhaniya powder, Mirchi powder)
Garlic
Sugar
Lil lemon juice
Make dough balls
Deep Fry in oil.

• Tomato Gravy
5 mins procedure
Oil
Add tomatoes
Add water
Add Muthiya
Add Stuffed Banana.
.
• Green Masala, which u even have to use to stuff potatoes, banana and eggplant.....
Finely Crushed Coconut (good proportion)
Coriander (1 full bunch)
Green chillies paste (many, like in this we used around 100gram)
Haldi
Dhanajeeru (we used 5 table spoon)
Garam Masala (very little)
Jaggery (do not substitute with sugar)
1 Table spoon chana lot (gram flour)
Green Garlic (alot, almost 2 3 bunch)
And Oil.

• Final Step 
Add all green masala and tomato Gravy in main and let everything set on slow flame for some more time.

Note - while mixing the gas flame has to be fast.

  • સુરતી ઉંધિયું । Surti Undhiyu, fulkas and ગાજરની ખીર । Carrot Kheer for our Makar Sankranti | Uttarayan festive lunch! .

No one back home really eats fulkas when there is Undhiyu on the plate. 🤣🤣 This is as close to making Undhiyu I can get to. Because the authentic Undhiyu made in a upturned Clay pot ( Undhu is upturned in Gujarati ) is almost impossible to recreate in urban homes. Also missing is the herb called Kaler | કલેર which grows in abundance as a weed in Southern Gujarat whose twigs and leaves are thrown into the pit of charcoal and wood in which the spiced pot of Undhiyu is placed. The aroma of that burnt herb is what lends Undhiyu a unique flavour from what is recreated in urban homes and restaurants. Our South Gujarati version is distinctly spicy ( with generous use of green garlic, I used the regular one ) and is usually deemed unauthentic or not up to the mark of there isn't a trickle of green Oil trialing the Undhiya. We make the green masala/ filling with tender pigeon Peas ( crushed ), fresh coriander, green chillies, green garlic ( in my case regular garlic, ) ginger and a knob of fresh turmeric. Oilseeds (peanuts and sesame seeds ) + fresh coconut is added as a binder. Muthiyas made of Methi, Besan and Whole Whear flour are added. I almost didn't make Undhiyu because it is a lot of work and also because it is impossible to make only a couple of serving of the same. But because my mom had so loving packed all the raw material except the green garlic on my last visit , I couldn't resist making it and  not making the best of them. .
P.S to simulate the oven / earthen pot like conditions,  I used the separators that come with a pressure cooker. I added water (plenty) at the bottom of the pressure cooker but not inside the separator. If you have 3 separators, place one at the bottom with a few tbsp of water to create some steam, no water in the middle one with veggies and keep the top one completely empty. The hard-to-cook root vegetables are fried before adding to the pot.  Cook on medium heat for 15-20 mins or more depending on the quantity. .

  • એ હાલો ઊંધિયું ખાવા :

આજ આપણું સૌનું મેનુ એકજ છે.. ઊંધિયું અને પુરી.. બે દિવસ પહેલા ઊંધીયા વિશે ની મારી પોસ્ટ મારી માં એ અને પત્નીએ વાંચેલી..એટલે આજે તેમને મારુ લખેલું ઊંધીયા ના વર્ણન મુજબ બનાવવાની કોશિશ કરી.. .
.
શાક માળે બાફ્યુ.. મુઠીયા હાલ્ફ ફ્રાય કર્યા.. વઘાર તલ ના તેલ માં કર્યો.. જેનો ઉભરો દરેક શાક ને તરબતર કરી ગયો..અને ઊંધિયું માટી ના પાત્ર માં ધીમા તાપે (ભઠ્ઠા ના બદલે ગેસ હતો) લગભગ કલાક સુધી ઊંધિયું નામમાત્ર પાણી માં ચડ્યું દમપુક્ત પદ્ધતિએ ચડ્યું.. ઇ ઊંધિયું પાકતી વખતે નીકળતી સુગંધિત વરાળ ઊંધિયું ખાવા માં કેટલું સ્વાદિષ્ટ હશે તેનો અંદાજો આપી જતી હતી.. .

પુરી સાથે ઊંધિયું, સુખડી અને વહાલી છાસ.. આ ફોટો જુવો. એકએક શાક તમને છૂટું દેખાય છે ને.. ઊંધિયું એવું હોય કે તેને પુરી સાથે ખાય શકો તેવું juicy હોય અને લુખું પણ ખાય શકો તેવું કોરું મોરું હોય..તો ઊંધિયું પરફેક્ટ કહેવાય.. બિલકુલ આવુજ ઊંધિયું ઘરે બન્યું હતું...જે પુરી સાથે તથા લુખું ખાવાની વહાલી છાસ સાથે ખૂબ મજા આવી.. .

  • While growing up, I barely paid any attention to undhiyu, dal dhokli etc. Ate it coz we had to. After leaving home for studies and work, I started craving home food, more so on festivals. Slowly, I started learning, valuing and cooking these traditional meals.

Here's our meal of seasonal vegetables - undhiyu, poori and jalebis... Or whatever was left of it.

Even flew a few kites, but no photos of that.

  • Home madeGujarati Thali for lunch. Specially with Undhiyu, Khandvi, Dal, Rotli, Different pickles, chutney and Salad. Undhiyu is a Gujarati mixed vegetable dish that is a regional speciality of Surat.  It's a seasonal one, comprising the vegetables that are available on the South Gujarat coastline, including the Surat, Navsari and Valsad regions, during the winter. New peas, unripe banana, small eggplants, muthia/fritters made with fenugreek leaves and spiced chickpea flour besan, sweet potatoes, potatoes and purple yam. These vegetables are coated with a thin layer of oil and spices made of ginger, garlic, green chilli, pepper, salt, turmeric, red chilli, sugar, carom seeds, asafoetida and freshly grated coconut. This dish is slow-cooked so that the flavours come out well till the vegetables are slightly crunchy but definitely do not overcook them. .
