🥑 Oven Baked Crispy Fries and Guac! 📷 by @veganbyeden 🚨🚨Recipe: Fries
4 large baking potatoes
11/2 tablespoons olive oil
salt & pepper
a sprinkle of paprika
Preheat oven to 400. Wash potatoes leaving skin on (you can peel them if you prefer).
Fill a bowl with cold water. Slice potatoes into 3-4 slices length wise and then into strips.
Let potatoes soak in cold water for at least 30 minutes (this removes starch from the potato resulting in crispier french fries). Remove from water and pat dry.
Toss with oil and seasoning.
Bake for 30 minutes. Turn fries and bake for an additional 10-15 minutes .
1 firm tomato, finely diced
1/2 white onion
1/2 cup chopped cilantro
2 tbsp fresh lemon or lime juice
Optional salt and pepper to taste.
Open the avocados and scoop out the flesh. An easy way is to cut it length-wise around the pit and than using a chefs knife strike the pit and then twist the knife so you can easily remove the pit and scoop out the flesh.
Mash the flesh with a fork, it can still have hard parts, follow your preference.
Stir the other ingredients .
Finally tried the @beyondmeat burger tonight. I ate mine with @daiyafoods cheese, jalapenos, avocado and Moroccan hummus.
I have to say I was pleasantly surprised by how good this burger was. Definitely a similar texture and taste to a beef burger. I know some vegans try keep away from meat substitutes but I do enjoy them. Especially since I like to cook for my omni friends.

Any change makes a difference. If you need to take time to adjust into the vegan diet.. do it... Take that time... Go to a vegetarian diet first.. Do what you need to do to get there but just stop ignoring the truth that our planet is being ruined by animal agriculture & greed.

Today I had salad because I'm currently renovating my kitchen. That doesn't matter because I love salad! 💚
I had iceberg lettuce, lamb's lettuce, arugula, tomatoes, radishes and mango. The dressing I made from freshly squeezed lemon and orange juice as well as maple syrup, salt and pepper!
Salt and Pepper Cauliflower with Chilli and Garlic 🌶️😊 Ingredients
1 x Head of Cauliflower (bit size)
3/4 Garlic Cloves (crushed)
2/3 Chillies (thinly sliced)
1 Cup Plain Flower
1 Can Coconut Milk (thick part)
2 tbsp Vegan Butter
1 tsp Paprika Powder
1/2 tsp Salt
1 tbsp Pepper
Oil to cook
Firstly break the cauliflower up into bit size pieces.
Put the thickest part of the canned coconut milk in a bowl followed by the butter, Paprika, salt & papper. Whisk until its all combined. Add the cauliflower to the bowl and mix until its all fully coated.
In a wok add about 2 inches of vegetable oil and heat to approximately 350c.
In a separate bowl and the flower and season with salt and pepper, take about 2/3 tbsp of the mix into the flower, this will make the flower go slightly lumpy to create more texture on the cauliflower when cooked.
Mix all the cauliflower into the flower and your ready to deep fry. This should only take 5minutes to cook and they will be nice and crispy.
Take them out of the oil and rest for a minute on kitchen paper. In a pan put a spoonful of butter and add garlic and chilli, give the cauliflower a mix to coat in all the chilli and garlic and they are ready to eat. 😋
