Ingredients:
For the base:
500 g sweet potato peeled and roughly chopped
2 cups oat flour
For the filling:
2 tbsp tomato puree
1 cup spinach
1 red onion sliced
3 chestnut mushrooms sliced
1 red pepper sliced
2 garlic cloves diced
pinch of salt & pepper
2 tsp Italian herbs
1 tsp chili flakes
2 tbsp olive oil
a few basil leaves
60 g vegan mozzarella sliced
Directions:
1. Preheat oven to 200°C and line a large baking tray with greaseproof paper.
2. Cook the sweet potato in a steamer for 20 minutes or boil the potato until soft.
3. Transfer the soft sweet potato to a mixing bowl and mash. Then add oat flour and mix with a wooden spoon until well combined.
4. Prepare a little water in a small bowl and use it to wet your hands, then shape the sweet potato dough into a ball and place it on the lined baking tray. Dipping your hands in the water will make it easier to shape the dough without it sticking to your hands.
5. Shape the dough into a circle roughly 0.5cm thick and smooth it out around the edges.
6. Bake the dough in the preheated oven for 15-18 minutes.
7. Meanwhile, prepare the toppings by mixing together the onion, pepper, mushrooms, garlic, salt, pepper, italian herbs, chilli flakes and olive oil until the veggies are fully coated in the seasoning.
8. Once the dough has finished baking, remove from the oven and spread the tomato puree on top followed by a layer of spinach. Then, start layering the veggies on the pizza.
9. Finish with slices of vegan mozzarella, some basil leaves and a drizzle of olive oil.
10. Bake in oven for 8-10 minutes.

1/2 cup risotto rice (120 g)⁣
1 medium onion diced (divided)⁣
2 big cloves garlic minced (divided)⁣
2 tbsp coconut oil divided⁣
1/4 cup white wine (vegan) (60 ml)⁣
1 1/4 cup vegetable broth (300 ml)⁣
1/2 cup coconut milk canned (120 ml)⁣
3 cups white mushrooms sliced (200 g)⁣
1 cup chickpeas canned (150 g)⁣
1 tbsp soy sauce (wheat free if GF)⁣
1 tbsp balsamic vinegar⁣
Nutritional yeast flakes to garnish⁣
Fresh parsley, black pepper, sea salt, red pepper flakes to taste⁣
Instructions:⁣
1. Heat 1 tbsp coconut oil in a skillet/frying pan, stir in 1/2 of the diced onion and 1 clove of minced garlic and fry for 4-5 minutes over medium heat⁣
2. Add rice, stir for about 1 minute until the rice is opaque. Pour over the wine, keep stirring constantly until the wine is absorbed⁣
3. Add 1/2 cup vegetable broth to the rice, and cook on low-medium heat until the broth is absorbed. Stir continuously and add more broth, 1/4 cup at a time until the liquid is absorbed and the risotto is cooked and creamy (about 15 minutes)⁣
4. In a different skillet/frying pan heat the remaining 1 tbsp coconut oil, stir in the remaining diced onion and minced garlic and fry for 4-5 minutes over medium heat⁣
5. Add the mushrooms and chickpeas and fry for 3-5 minutes, add balsamic vinegar, soy sauce, and coconut milk and let simmer for about 5 minutes, stirring occasionally. Season with black pepper, red pepper flakes, salt to taste and fresh parsley⁣
6. Transfer the mushrooms mixture to the risotto rice, stir in the nutritional yeast flakes and enjoy!⁣

👉 Он бывает светлый(сырой) и темный(обжаренный). Сырой Кероб более сладкий, но менее похож на какао, в отличии от темного, которой может отлично заменить какао. Я чаще использую темный, т.к. у него более выразительный вкус.👌

❓ЧЕМ ОН ОТЛИЧАЕТСЯ И ЗАЧЕМ ИМ ЗАМЕНЯТЬ КАКАО?

Помимо того, что в нем небольшое содержание жиров, в нем нет кофеина, фенилэтиламина (который вызывает головные боли) и щавелевой кислоты.

Être vegan c’est clairement pas se limiter à 3 feuilles de laitues par repas ! C’était délicieux ! Très riche, très bourratif et créatif, chapeau à l’équipe ! À refaire !

  • Jalapeño Cream Sauce

Oohh yaaaa I love me some jalapeños. This sauce is so creamy, so delicious, so addictive! Use it on top of tacos, quesadillas, burritos, whatever!

Ingredients:
• 2 tbsp olive oil
• 2 fresh medium jalapeños, seeded and chopped
• half of an onion, chopped
• 2 cloves garlic, chopped
• 1 cup cashews, boiled until soft
• juice from 2 limes
• 1/2 cup fresh cilantro
• 1/2 cup non dairy milk
• 1/2 tap salt

Instructions:

Boil your cashews until soft, about 20 minutes.

Heat olive oil in a pan over medium-high. Add onions and sauté until softened, about 5 minutes. Then add garlic and jalapeños, lower heat so the garlic doesn’t burn. Cook 5 more minutes.

Drain and rinse the cashews, place them into your high-speed blender with the onion, garlic, and jalapeño mixture plus all of the other ingredients. Blend until very smooth scraping down the sides as needed!

I like to refrigerate this until its chilled before I use it 😁 also a reminder to please wear gloves when cutting and seeding your jalapeños!! *
