1 tbsp olive oil
1 yellow onion, diced
3 cloves garlic, minced
1 tbsp fresh ginger, minced
2 tbsp yellow curry powder
1 tsp cinnamon
1 tsp cumin
1 (14oz) can diced tomatoes
3 (14oz) cans coconut milk
1 large head of cauliflower, cut into large florets
In a 5qt (or medium sized pot) heat olive oil over medium heat. Add in onions and saute until translucent. Add in garlic and ginger and continue sautéing until fragrant, about 1-2 minutes. Add in curry powder, cinnamon, cumin and diced tomatoes and stir until combined with the onion mixture.
Slowly stir in coconut milk and bring to a simmer. Allow to simmer for 5 minutes, stirring often. Using an immersion blender, blend the base of the curry until smooth. Alternatively, remove from heat and transfer to a blender, blending until smooth. Bring the soup back to a low simmer and add in cauliflower. Simmer cauliflower until fork tender, about 20 minutes.
Serve over rice with with fresh cilantro and warm naan.
Bit of a random dinner, but I got some of the Waitrose fishless fingers reduced the other night so had them with sweet potato mash, sweet chilli broccoli and Tesco mayo maize. The fish fingers look rank but are actually pretty nice!

DAY 17 OF THE 28 DAY CHALLENGE!!!!
It may be hard to believe but I wasn't training regularly or well for the last 2 months due to laziness and lack of self motivation (yes, it happens to all of us), so a lot of my injuries, aches and pains were caused due to less movement and not looking after myself.
This challenge so far has let me get back into a regular routine, look after myself better, focus on my own training again, as well as clean up my foods and clearly started giving my body some definition and shape in the area I find the hardest to get it in - my belly!!
You only get out what you put in, and it's worth every second and every cent to help you find yourself again!

Cooking a meal from scratch 7 days a week can be tough (okay even 4 days a week is tough for me with a 2 year old at home 😩) which is why I love products like @gardein meatless bites. What they say about vegans can be true. We can be pushy, peachy and come off “extreme”. But let’s back up for a second, put us vegans aside and talk about what veganism is all about.
At the end of the day, veganism is about love, kindness, compassion, unity, values that most of us already aspire to embody in our lives.
It’s about living in a way where we extend the kindness and love that we already have not just to humans across the globe, but to non human animals as well.
It’s normal in our society to consume animal products, and that’s the thing. We learn to not think about it, but if you go behind the scenes, you’ll see that for us to eat pizzas, turkey sandwiches, sushi, and tiramisu, innocent animals suffer and die.
Most of us love animals - and if we don’t - we at least wouldn’t wish them any harm. And I promise that if you took a look inside a slaughterhouse today, you would NOT be ok with what you see.
Being vegan means putting compassion into action. It’s about taking values that we already have and extending them to all beings.
It’s about going from loving just cats & dogs & wild animals to loving all animals, even though some are labeled “farmed animals”.

Awwwww. Throwback to exactly 2 years ago to DATE! when my little guy was sick was a 103 fever. Teeth coming in had him all messed up. So much has changed in 2 years. He’s grown into his very own persona and it’s amazing and scary at the same time lol.
