  • Snacking low carb plate of goods for lunch today. Romaine lettuce with turkey breast, hard boiled egg, jack cheese, cucumber, tomato and olives. Plates like this not only give me variety but are easy to prepare and extremely satisfying. I hope your having a great day!

  • Happy Friday eve 🙌 Started this morning off at @purebarreprinceton followed by this delicious breakfast - pasture raised scrambled eggs, sautéed spinach and mushrooms with garlic and red pepper flakes, and half of a local everything bagel with @melaniesmedleys veggie cream cheese, spinach, red onion, and tomato.

  • I call this “Evolution of a Veggie Stir Fry”. Didn’t think to take pics at the very beginning.  It’s cubed sweet potato with diced rainbow carrots, diced red onion, shredded Brussels sprouts, red chard, some olive oil and red clay sea salt Lisa and I got in Kauai.  I topped it all off with a handful of blue cheese in the bowl.  The end result was quite yummy and filling if I may say so myself. #mediterraneandiet #mediterraneandietrecipes #veggies

  • Guess who actually meal prepped today!🙋🏼‍♀️ I've been meaning to meal prep for awhile now, but never really got around to it. But lately, I've noticed how time consuming cooking all my meals each day actually is. I mean supper alone usually consumes 1-2hrs EACH DAY. I could be doing way more productive things with that time. I also usually take FOREVER trying to decided on what to make which just creates more things to worry about, which doesn't help. 😅

So, I meal prepped and it was actually somewhat successful! It took almost twice as long as I expected, but that's probably because I didn't really have a plan hahah I kinda just started making food. But I got it done! Hopefully, it saves time throughout the week and helps clear my mind so I can focus on more important things.😊 Notes for next time: 
1. Repeat meals
2. HAVE A PLAN 😂

  • Day 17 of fasting is officially in flight. Feeling amazingly energised and ready to get back running tomorrow 🏃🏽‍♀️ Scores of people have been asking how I have managed to fast this long, it made me wonder why.... Then I remembered a few years ago I did a “juice fast”. I had ordered the products offline and I had 5 small juices through the day. I’ll be honest I was starving... The memories made sense. 
Reality Check.... This is what juice fasting should actually look like 💚

I am currently drinking 3l of juice a day, plus a couple of litres of water. My body is nourished with organic plants, cold pressed and juiced. 
If you’re going to fast... Please do it properly ❤️ #juicefasting
