it doesn’t matter if you are vegan, vegetarian, or omnivorous, you should be getting B12 on a consistent basis for optimal health. I recommend a methylcobalamin sublingual 💙 @globalhealingcenter has some great stuff. Otherwise, most health food stores should have some!

  • When I posted a batch of kimchi here and in my stories last week, a few people asked me what I eat it with. This is one idea: on sourdough bread with hummus. This tastes amazing. The sourdough bread, more digestible than bread made with baker’s yeast, serves as the yummy platform, the hummus provides a bit of protein and the kimchi supplies lots of gut-friendly probiotics and...vitamin B-12.

If you are vegetarian or vegan, you may be lacking in vitamin B-12. The main sources of B-12 are animal products such as meat, poultry, eggs and dairy. But several studies have shown that some fermented foods can increase your intake of vitamin B-12. Certain strains of lactic acid bacteria—the naturally occurring bacteria that ferment foods—can produce certain B vitamins, including vitamin B-12. Yet another reason to eat mouth-watering kimchi.

  • A clear link exists between peripheral neuropathy and vitamin B12 deficiency. Symptoms of lack of vitamin B12 can cause anemia, nerve damage and degeneration of the spinal cord. Anemia develops first usually unless the person is taking a folate supplement. A lack of B12 damages the myelin sheath around the nerves leading nerves to function improperly and allowing conditions like peripheral neuropathy to occur. Even deficiency of B12 that is MILD can affect the brain and nervous system. Lack of coordination, pain, numbness and tingling in hands and feet, sensory loss and muscle weakness are just a few of the symptoms associated with a vitamin B12 deficiency.  Optic neuropathy is one manifestation of vitamin B12 deficiency.

Studies show food selectivity, a common complication in autistic children can result in vitamin deficiency that can cause visual loss and optic atrophy.

Effective prognosis and treatment of peripheral neuropathy depends on the cause of peripheral neuropathy. If vitamin B12 deficiency is the cause, it can be treated with vitamin therapy and a diet change. Peripheral nerves have a limited capacity to regenerate and treatment may only stop the progression not reverse damage.

B12 bildet am Weg von der Nahrung (oder dem Supplement) zur Zelle mehrere Komplexe, um unbeschadet zum Ziel zu kommen. Diese Grafik aus meinem Buch "Vegan-Klischee ade!" beleuchtet dieses Thema und erklärt, was an welchen Stellen im Körper passiert.

1. B12 aus tierischen Produkten liegt zumeist an Protein gebunden (im Supplement ist es ungebunden) vor und muss daher erst im Magen durch die Magensäure davon getrennt werden. Liegt im Alter oder bedingt durch Medikamente zu wenig Magensäure vor, kann dies nur eingeschränkt funktionieren und das B12 wird in weiterer Folge nicht korrekt absorbiert und man kann trotz ausreichender Zufuhr einen Mangel erleiden.

2. Nachdem B12 im Magen von seinem Protein-Komplex gelöst wurde, bindet es mit dem aus den Speicheldrüsen gebildeten Haptocorrin (HC) einen neuen Komplex (B12-HC-Komplex), um vor der Magensäure geschützt zu sein und weiter in den Dünndarm zu gelangen. Sollte es einen Mangel an diesen Transportern geben kann es hier einen weiteren Engpass geben.

3. Im Magen wird zeitgleich der Intrinsic Factor (IF) gebildet, der für die Aufnahme von B12 im Dünndarm unabdingbar ist. Wenn die Bildung des IF gestört ist, kann trotz B12-Zufuhr die Absorption nicht gewährleistet sein und es kommt zur sogenannten "perniziösen Anämie", die früher tödlich verlief.

4. Damit das B12 im Dünndarm schließlich aufgenommen werden kann, muss es mit dem IF einen Komplex bilden, um dann an die IF-Rezeptoren im Dünndarm zu binden. Dafür wird es im Dünndarm durch Trypsin aus der Bauchspeicheldrüse aus seinem B12-HC-Komplex gelöst und bindet dann mit dem IF (B12-IF-Komplex). Liegt zu wenig Trypsin vor kann auch hier die Verwertung von B12 gestört sein.

Wenn alle Vorgänge im Organismus korrekt verlaufen sind, bindet der B12-IF-Komplex im letzten Abschnitt des Dünndarms an die IF-Rezeptoren und kann so durch die Dünndarmwand in das Blut aufgenommen werden.
