  • whole 30 approved cauliflower fried rice 🍚 i love simple meals that are easy and quick to cook. they definitely make #whole30 more attainable.
to make this i sautéed fresh ginger, garlic, carrots, and green beans in avocado oil and coconut aminos. then i added the cauliflower rice and more coconut aminos and cooked until cauliflower was tender. lastly i cracked two eggs, salt, pepper, and mixed until it was cooked thoroughly. threw it in a bowl, seasoned with everything but the bagel seasoning, and chopped green onion. hope all is well #andapinchoflove

  • Let's talk dinner! If you don't follow @thedefineddish , you are missing out. This is her Nashville Un-fried Hot Chicken. It's my first time making it and I am not disappointed. I was craving some fried chicken...mostly just the crispy skin, let's be honest. And then make that crispy skin spicy?! Yes, please!!! I served it with some sweet potato wedges topped with @tessemaes (because, duh!), coleslaw (ingredients on the next picture...I made it up) and celery. 
Make this. Seriously. It's easy, flavorful, and so dang good!

I’ve cut sugar, dairy, and grains and am limiting processed foods. I’m not far into this adventure but am trying to focus and stay encouraged. {Cause I’m really wanting chips and chocolate right now} . 
I found the recipe for this strawberry vinaigrette, & it exceeded my expectations. Easy and delish! 👌🏻 If my darn avocado would have been ripe, this salad would have been even better! {Well, and cheese. Blue cheese would have been heavenly in this but, alas, dairy 😏🚫} . 
Spinach. Strawberries. Almonds. Apples. Onion. Zucchini. S&P. 🥗 I left out the honey the recipe called for, but I would definitely add it! Yum! 🍯. . . 
4 medium strawberries
3 Tbsp. olive oil
2 Tbsp. champagne vinegar
2 Tbsp. lemon juice
½ tsp. honey (optional - omit for Whole30)
dash of sea salt & black pepper

While thinking positive/neutral affirmations is of course PART of the process, what SO many people ignore is that you also need to DIG IN TO THE NEGATIVE THOUGHTS. You need to hear them for what they are and then CHALLENGE THEM. What am I saying? Why am I saying that? Where did it come from? What does it REALLY represent? Can I know it to be absolutely true? Is this thought serving me? ⁣

If you want real bone broth and its benefits, you can easily make it at home. However, if you don’t want to spend the time, you can purchase collagen peptides in powder form. Currently, it’s a very popular supplement and can be easily added to your coffee, smoothies & baked goods.  I use the powder form daily and I make bone broth whenever I can grass fed/finished bones from local farmers. Here’s how I make the broth….. Bone Broth
1. Boil bones for 30 minutes to kill off surface bacteria.
2. Bake bones in oven 400F for 45 minutes to give the bones nice roasted flavour. This helps to make your broth have a nice rick, dark brown color.
3. Place bones in instapot along with 10 peppercorns, 8 cloves, 2 bay leaves, large onion, 3 carrots, splash of apple cider vinegar, sea salt. Fill with water.
4. Pressure cook 45 min, then let pressure release on its on (don’t force)…repeat this process 3-4 times. Let simmer till you are ready to fill jars and freeze for storage.

  • Get ready to want this for every meal once you try it. It is by far my favorite new meal I’ve tried lately. Also, it’s a CHAMP at the leftover game! There’s so much flavor in this meat mix you won’t even believe it. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Okay, okay, okay. Have I hyped it enough yet? That’s what I thought. On to the goods. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
KOREAN BEEF BOWL
____________________________
1 lb ground beef
1 tbsp minced ginger 
1 tsp garlic powder
1 tsp onion powder 
1 tsp red pepper flakes 
1/2 tsp salt
2 tbsp coconut aminos (or soy sauce if you’re into that)
1 tbsp chili garlic sauce 
1 tbsp Frank’s Red Hot Sauce (or the hot sauce of your choice)
1/8  cup of mayo 
2 cups cauliflower rice
Greens of choice (I used spring mix)
Scallions (for topping) 
Sesame seeds 
1/2 avocado ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Add the meat to a skillet to brown. Add in minced ginger, garlic powder, onion powder, red pepper and salt. Continue to cook meat until brown. Add in the coconut aminos and chili garlic sauce and cook for about 5 more minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
While the meat is finishing cooking, add some oil to a separate pan. Add your cauliflower rice to the pan and cook until starting to slightly brown (roughly 5 min). ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Put mixed greens in a bowl. Add the cauliflower rice and ground beef mixture. Top with scallions, avocado, sesame seeds. Mix together mayo and hot sauce and add to the top.

Here’s the recipe, and it is #paleo and #vegan 🌱🍑

Wet ingredients: * 1c mashed banana
* 3/4c grated sweet potato * 1/4c olive oil * 1/3c maple syrup * 2TB vanilla
* 1TB ACV
* 1/4c almond milk

Dry ingredients: * 2c Paleo flour mix (I made my own with .5c ground flax, 3/4c of each coconut & tapioca flour) * Baking powder (1 tsp vinegar mixed with 1TB baking soda) * Lots of cinnamon & nutmeg

Sautéed peaches: * 2c peaches (I used frozen) in a frying pan with coconut oil & cinnamon until soft and gooey. Chop into small pieces

Directions: * mix wet ingredients together. Then mix dry together in a separate bowl
* Fold the dry ingredients into the wet and add peaches * Pour mixture into a loaf pan * Bake at 350 for about 40 mins (it will still seem gooey and moist when done)

  • On 01/02/19, I attended my first class @njfitfactory in hopes of disciplining myself. Immediately after the class, I wanted to sign up and join a 6 week transformation challenge which consists of clean eating and attending classes at least 3x a week. Here I am 6 weeks later.. 17 lbs down and I am not stopping. My results from this challenge only fuel my fire to becoming stronger and more disciplined. 
This is more than just losing weight and looking good in a bathing suit. It is about pushing myself to the limit, learning to say no, and not giving up when things get hard. MIND OVER MATTER!
Huge shout out to @vivalanemoo for dragging me to the 6am class, and @tarrant_tv @jessicorredor @mr_carter57 @_mikegee7 for creating workouts that push me to my limits!

  • Today Alex bought a Tex Mex trail mix that has about 100 ingredients that sound made up, but it smelled sooooo good. I’m a sucker for anything crunchy and spicy! I know this isn’t trail mix, but it satisfied my craving in a healthy way!

Set the oven to 350 degrees and roast for 15 minutes. Take the sheet pan out and stir the almonds around then put back in for another 10 minutes. Let cool and portion out for easy grab and go snacks! I love keeping a baggie in my purse and in my car for emergencies!
