Some days a 10 minute meal is where it's at...the good news is it doesn't have to be any less nutritious than a meal you might spend an hour preparing! Grilled Cos with Peas & Eggs ⠀
2 mini cos lettuce, cut in half lengthways⠀
2 cups frozen peas⠀
½ avocado, sliced⠀
1 handful mint leaves, finely chopped⠀
¼ cup fetta, crumbled⠀
8 eggs, at room temperature⠀
¼ cup pine nuts, toasted⠀
EVOO and lemon juice to serve⠀
Bring a saucepan of water to the boil, reduce heat to low, carefully drop the eggs in and cook the eggs for 5-6 minutes (8 if you like them hard boiled), before running under cool water and peeling them. Meanwhile boil the kettle and pour boiling water over the peas to defrost for 2-3 minutes, then drain. ⠀
Heat a griddle pan to high heat, rub some Extra Virgin Olive Oil on to the cut sides of the lettuce and grill for 2-3 minutes until char marks have appeared. ⠀
Plate up the cos lettuce and top with the peas, avocado, mint leaves, fetta, eggs (cut in half), and pine nuts. Drizzle over some EVOO and a squeeze of lemon juice. #BodyGoodFood
Mindfulness part 2: Breathe - Practising deep inhalation and exhalation is one of the key ways to engage in mindfulness. I use the 4-7-8 method.
It's where you:
1. Close your mouth and take a deep breath through your nose and hold it for 4 seconds
2. Exhale loudly through your mouth (I make the "whoosh" sound)
3. Repeat step 1 but hold your breath for 7 seconds
4. Exhale loudly through your mouth for 8 seconds
I usually repeat the cycle 5 times and it calms me.
I suspect it is calming because it is highly difficult for me to focus on breathing and worrying at the same time.
