Wrap ( can use wrap of your choice, e.g lettuce, spinach, tortilla, etc.) Homemade Chicken Burrito Seasoning:
-4 tbsp chlli powder
-3 tbsp cumin
-3 tbsp paprika
-2 tbsp onion flakes
-2 tbsp garlic powder
-1/2 tbsp cayenne pepper
1. In a shallow plate, combine chili powder, cumin, paprika, onion flakes, garlic powder and cayenne pepper. Season the chicken with salt and pepper; dredge in the homemade chicken burrito seasoning mixture; shake off excess and set aside
2. In a large skillet, melt 2tbs butter. Cook chicken until golden on each side and cooked through. Transfer to plate.
3. In the same pan, add cauli rice ( or any substitute that you'd like). Add more homemade burrito seasoning. Cook for a min.
4. Serve with wrap (or any wrap of choice). Put our burrito chicken, egg and cauli rice

This simple tomato, cucumber, and avocado salad gets a spicy Mexican-flavor kick from jalapeños and a fresh lime and chile dressing that makes it a terrific side dish for any meal.

Serves: 2 as a main, 6 as a side
1 hot house English cucumber, seeded and sliced into ¼-inch slices
2 avocados, peeled, pitted and sliced into ½-inch chunks
8-10 Campari or cocktail size tomatoes, halved and then quartered
¼ Maui onion, thinly sliced
1 jalapeno, sliced
1 cup fresh cilantro leaves
2 tablespoons canola oil
Juice of 2 limes, about ¼ cup
¼ teaspoon chile powder
Generous pinch of sugar
Kosher salt and freshly ground black pepper

So last night we had some guests over... and what better of an appetizer to send out than some bacon wrapped cream cheese stuffed jalapeno poppers! The spice from the jalapenos were masked slightly by the full fat cream cheese. Wrapped with #bacon , the appetizer was a nice heavy delight. ☺️👌
