Happy Friday and I’m all ready for the weekend. Lunch today is a great big lemony arugula and white bean salad with tomatoes, red onion, shredded Parmesan and hard boiled eggs, dressed with fresh lemon juice, extra virgin olive oil and seasoned with salt and pepper.
